Can’t Complain

There aren’t too many things I can complain about right now. Well, maybe the wind. I’m not a fan of windy weather. I suppose it’s another excuse to wear my cozy Uggs in the middle of June though. Despite the less than ideal climate, home life is pretty plush; the eats are particularly superb.

The following meal might be one of my very favorite dishes… ever! That’s huge, folks. I made this once last summer, and I’ve been anxiously awaiting peach season ever since.

Summer Salmon with Apricot Peach Salsa

Want to make the most-delicious tasting Omega 3’s?

Salsa:

Chop 2 small ripe peaches and 3-4 ripe apricots and place in a small mixing bowl. Add ~1/2 c. chopped onion, 1/3 c. chiffonade of fresh basil, and 1/2 – 1 whole [red or green] jalapeno pepper – finely chopped. Sprinkle with a couple teaspoons of sugar, a pinch of salt, and drizzle of olive oil.

Salmon:

Rinse and pat dry a filet of wild salmon. Brush meat with olive oil and place in a glass baking dish. In a small bowl, combine a few tablespoons of light brown sugar, salt and a pinch each of oregano and thyme. Rub onto oiled filet. Bake @ 450* until fish is opaque, approx. 12 minutes [depending on thickness].

Meanwhile, cook a pot of quinoa [or brown rice] for the whole grain base. Then assemble your summery salmon + salsa and enjoy by candlelight sunset.

Hair is a serious matter.

Not only do I strive to keep my insides at their healthiest, but I also believe maintaining your outer beauty health is important too. I like to give my mane a healthy trim every 3-4 months. How important is skin/hair care to you? How often do you get your hairs trimmed?

I get my hair cut every 5-6 months…it’s bad. I usually wait until I can’t take it anymore and/or every end is split and ratty. My haircuts are expensive (to me) and I like my hair long!

ohhhh salmon + apricots yum! it’s such a pretty meal!
i trim my hair every 8-10 weeks… i’m obsessed. but i have short hair, so i have to or it will lose its style and look funny.

Juuuust might have to try that peach salsa! Sounds PERFECT for a ridiculously hot Florida night.

I’m kind of obsessive about who touches my hair, so I only get it done every 4 months or so, usually… because it costs close to $70 every time. What can I say? Some things you just gotta splurge on :]

My hair and skin is so important to me! Because I know I don’t get enough Omega-3′s (I kinda severely dislike most fish), I take fish oil which also has great effects on my hair and nails :)

Oh, that salad looks really good!

I take good care of my skin, but my hair gets cut only a few times a year.

I just found out Renata’s Creperie does gluten free! (I think — I googled it. =P) I am *so* dragging my friend there next week.

Wow, that salsa sounds absolutely lovely for a warm summer meal. The crepe and Waffle Wedn look great too, of course. Your hair looks so clean and healthy. I too strive to keep my hair and skin as healthy as possible without harsh chemicals and products. I also try to not wash my hair too often.

GORGEOUS pics! Those waffles look incredible. I should definitely get my hair trimmed more often than I do – it’s super long and I need to maintain the ends so I can keep it long. Lots of deep conditioning. :)

Your pictures are so clear! What kind of camera do you use?
I try to do everything I can do maintain a regular facial, skin, and hair regimen! It’s so important!! I would say I splurge on my products!

Your photography skills are great – I’m drooling over your waffles, salads, eats out and that heart-happy latte! Your hair is beautiful too.
I used to have longish hair, but then I started to iron it, dye it, neglect it, etc. My poor hair started to break and turn brittle. When I realized what I had done I immediately trimmed it. I’ve been deep conditioning, taking vitamins and keeping those hot irons away and it has been growing back so quickly!
