Today hasn’t been a terrific Tuesday. It’s been one of those days where you encounter one rude, snappy person after another. It’s been one of those days where you have an afternoon breakdown in your car and the the next best thing to self-pity is a foamy latte and piece of Chocolove Dark Chocolate with Sea Salt and Almonds. Then, to rid of any lasting frustration, you write. Writing is how I deal. I like to spell out my life on “paper”. I like pressing each individual key on the keyboard in a syncopated melody. I like taking my life and turning it into poetry. I don’t talk a whole lot. When I do, it’s quietly. But when I write, I can be bold, precise, truthful, raw. Writing is how I deal. So, that’s what I am doing now. There will also be some photographs thrown in from yesterday. Yesterday was a good day, and since I like to focus on the positives, we’ll stick with Monday, fast forward over today, and then take it from Wednesday… Wednesdays are always wonderful.

I had an amazing afternoon snack. After my awful experience with whey protein powder, I was so excited to have found Amazing Grass to add to my Chocolate Cherry Bomb Green Monster smoothies. I had no stomach issues this time around – my tummy loves GREENAGE.

1 frozen banana
1/2 c. frozen cherries
1 1/2 c. spinach
3/4 c. unsweetened vanilla almond milk
Chocolate Amazing Grass
With a boost of green energy, I was ready to do some baking! Enter one of Angela’s splendid vegan creations…
Cherry Coconut Butter Banana Bread
[original recipe @ Oh She Glows]

1 3/4 c. whole wheat flour

2 T ground flax
-
1 tsp. cinnamon

1 tsp. baking soda
-
1 tsp. baking powder
-
1/2 tsp. salt
-
2 1/2 ripe bananas
-
1/2 c. real maple syrup
-
1/4 c. unsweetened vanilla almond milk
-
3 T canola oil
-
2 T coconut butter
-
1/2 c. chopped + toasted pecans
-
6-8 halved + pitted cherries
-
1 tsp. unsweetened coconut
In a medium bowl, mix together dry ingredients. In a small bowl, melt coconut butter in the microwave for approx. 20 seconds. In another bowl, mash 2 whole bananas, then add other wet ingredients (including the coconut butter). Whisk until combined. Add wet to dry. Mix minimally, then fold in chopped pecans and other half of banana, coarsely chopped. Plop into a greased loaf pan and place cherries on top along with a sprinkling of leftover chopped pecans and 1 tsp. of unsweetened coconut. Bake @ 350* for 45-50 minutes.
Note: My loaf did not turn out as ooey gooey as Angela’s. In fact, it was quite the opposite – dry and ‘wheaty’. After spending a sh*t ton on pecans at the store and chopping them for the recipe, I forgot to fold them in – oopsie. Perhaps follow Angela’s recipe more precisely, as mine didn’t get a whole lot of praising from my critics. I ended up smearing mine with [non-vegan] buttah : )

I often get lazy when it comes to dinner – it’s, by no means, my favorite meal of the day – but, I try to keep it nutritious nevertheless.

Truth: pecans are expensive!
The best way to beat frustration from rude people is to do something nice. If people are giving me road rage or if I’m having a bad day I will pay the toll for the person behind me or hold the door open a little longer for someone. Doing something nice for someone else makes up for the fact that other people can be rude and it makes you feel light and happy =)

And I agree, writing is so very cathartic. :)
I’m definitely a writer too. I bust out the old composition notebook and scribble down any and all thoughts that come to me. Kind of like a stream of consciousness thing. Sleep usually works as well.

Tuesday was a frustrating day for me too! Every little thing seem to irk me somehow…ugh! I dealt with it by going for a really powerful run on the treadmill (stayed indoors to avoid the heat and humidity). Sometimes, I even like to visualize that I am sweating out my stress and physically ridding my body of that burden. It helps, but some days are just rotten and need to be skipped over like you said.
The food looks delicious! I love that you took your pictures outside, makes it look so natural.
Sorry to hear you had a not so terrific Tuesday, hope things look up today! I admire your positive attitude though. I tend to write it out or run it off.
i think that is the greenest grass i’ve seen in my life! haha. so pretty! when i’m frustrated i need alone time! or i just go run.

Favorite vegan recipes revolve around burritos, wraps and bowls – I am generally pretty successful at making them super flavorful and filling.
I love to recreate a recipe to vegan; today I am making my (faux) chicken chile enchiladas… I’ll be posting step by step & the recipe :)

whenever i hit a wall, i always keep in mind: tomorrow is a new day. it works for days where u eat junk food all day long, days where you want to scream and cry into your steering wheel, and days that just dont feel right. your food looks wonderful. you will be back and better than ever today :) i deal with my frustration by crying and laying in my bed alone. crying is seriously the best. sometimes you just need to shed a few tears, punch your pillow, read a book, and get back at it!

Hillary – I hope today goes so much better for you! I am the WORST at dealing with frustration. I tend to turn into a rude person myself and snap at my husband…which is completely unfair to him! I’ve really been trying to work on that lately…I’m working on how I react to things. I can’t control what others do/say, but I CAN control how I react. I am in control of my happiness!
I loved this. Dinner isn’t my favorite meal either, but that looks scrumptious! I’m with you, writing is how I deal. It is raw! I can be so much more honest on paper, or the computer, than anywhere else. Frustration is a tough one, I usually turn to yoga and meditation or writing (blogging rocks!).
My favorite vegan meal is roasted sweet potatoes, a bunch of veggies with chickpeas on a bed of spinach or other leafy green.
i agree that writing is one of the best things to do when stressed/upset. it helps me deal too! i’m sure lots of bloggers can relate :) & your banana bread sounds & looks delicious! homemade bread is the best. i get lazy w/ dinner too, you’re not alone!
Sorry Tuesday wasn’t such a great day for ya. I am the same way when I’m stressed/upset though. I’m able to express myself in writing so much better than I can when I talk. It can be therapeutic.
Anyway, on a positive note, that cherry coconut butter banana bread looks delicious!! I keep seeing it on people’s blogs…and I really need to try it!!
