Don’t Fight the Feeling

by Hillary on July 13, 2010

1. Don’t fight the feeling of wanting to watch last night’s episode of The Bachelorette at 10:30 a.m. in your sweaty and muddy exercise clothes.

2. Don’t fight the feeling of wanting lunch 2 hours after eating breakfast.

3. Don’t fight the feeling of wanting a PB&J for lunch, despite eating a bowl of carbohydrates for breakfast. Just eat your vegetables.

4. Don’t fight the feeling of wanting to take photos outside in the grass for the 16th time this summer.

5. Don’t fight the feeling of wanting to take a nap after an 84-minute run, including 3 longgg hill repeats.

6. Don’t fight the feeling of wanting to bake zucchini bread an hour before dinner.

7. Don’t fight the feeling of wanting to add chocolate chips.

Summer Bliss Bread

[original recipe from me!]

Dry.

  • 3/4 c. all-purpose flour
  • 3/4 c. whole wheat flour
  • 1/3 c. rolled oats
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • pinch of salt

Wet.

  • 1/2 c. canola oil
  • 1/2 c. organic cane sugar
  • 2 eggs
  • 2 T non-fat plain Greek yogurt
  • 1 tsp. vanilla

  • 2 c. zucchini, shredded
  • 1/2 c. walnuts, toasted & chopped
  • 1/4 c. chocolate chips

In a smallish bowl, mix together dry ingredients. In a medium-large bowl, whisk together oil and sugar. Whisk in eggs, 1 at a time. Add yogurt and vanilla. Add flour mixture alternately with the zucchini [minimal mixing is key]. Fold in nuts and chips. Plop into a greased loaf pan and bake @ 375* for 50-60 minutes.

8. Don’t fight the feeling of wanting to smear a piece with Cacao Bliss – life’s too short.

A relaxing day at the Hillary household: running, napping, baking. I hope you enjoyed a moment of relaxation on this Tuesday, too : )

See you!

Hillary

  • Did you participate in Running Tuesday? I sure as heck did!
  • Are you watching this season of The Bachelorette? Your pick? Roberto!
  • What do you like to do with zucchini? Besides baking… grilling it, or adding it to vegetable stir-fry or pasta.

I was actually thinking about making zucchini bread or muffins and yours looks delicious! I think I may just have to try your recipe :)

I definitely agree with the don’t fight the feeling of wanting PB&J for lunch – balance is key!

I have not been watching The Bachelorette this season…I know! I’ve become too obsessed with it in the past that I just needed a break. And I think I might be the only one in America that isn’t the biggest fan of Ali – she’s alright, just wasn’t my fave. I absolutely love zucchini – baking bread is my favorite. I found a great recipe for a carrot/zucchini bar recipe that I want to try out soon – you add cream cheese frosting on top. I think that sounds like a good idea! :)

Girlie, that zucchini bread looks too good for words. And good for you for really listening to your body yesterday! Naps + zucchini bread+ PB and J lunch sounds perfect to me. :)
My Bachelorette pick is definitely Roberto…OMG, what a cutie, and so sweet too!

Best choice for Ali? Team Roberto!

But Cape Cod Chris’ family might be the sweetest group of people in the world!

Aw, this post made me really happy that it’s summer! I wish I was out enjoying the sunshine!

Favorite thing to do with zucchini: zucchini fries! (bread ‘em and bake ‘em, then dip in a wholllle lotta ketchup!) Yum!

-Grilling & baking it!

I have two big zucchinis that I need to make into zucchini bread pronto. Anyway, yes I’m watching this season of The Bachelorette and I like Roberto too. I mean I like Chris too, but she is just so cute with Roberto. Frank is going to tick me off so much next week… have you heard about the ending rumors?

Your bread looks GREAT!!!

I’m not a fan of The Bachelorette…I never have liked those shows for some reason. It’s weird because I love all reality TV!

I’m about to make zucchini bread myself. It’s been a summer staple since I was a kid! SO good with choco chips!

I am a total offender of the ‘ohh, let me just add a few chocolate chips’ scenario. I do it with a good majority of baking recipes. :)

Cute post! I just got a ton of zucchini from my garden so this bread will most definitely be made. I like to make baked breaded zucchini, and zucchini fritters are my next dinner!

That zucchini bread looks AMAZING. Will definitely be making it soon :-D

Yummy looking zucchini bread. Some feelings are just meant to be, go with the flow. What type of bread is that for you PB&J by the way?
