Square Meal Sunday

by Hillary on July 25, 2010

The majority of the time I am okay with a simple, one bowl dinner. I could eat a huge salad night after night. Though, sometimes I appreciate a full, nutritionally balanced plate a food at the end of the day, especially Sundays. The past two nights I didn’t eat at home, so tonight’s scrumptious supper was particularly appreciated.

  • Wild Salmon + Briana’s Lemon Tarragon Marinade

Trying to take in my Omega 3’s in the way of salmon while I’m home [by the sea], as I don’t typically purchase/cook fish for myself while at school.

  • Roasted Broccoli with Olive Oil + Salt
  • Quinoa + Fresh Pepper
  • Salad: Homegrown Greens [Little Gems, Arugula, Parsley], Heirloom Cherry Tomatoes, Avocado, Lemon Cucumber, Olive Oil + Seasoned Rice Vinegar

Normally, I polish off my dinner and am still slightly hungry, but I could not finish my plate tonight. It really makes a difference having a high protein meal [salmon + quinoa]. Love big Sunday breakfasts and dinners.

I’ve found a new love: crispy, salty roasted broccoli – mmmm!

I feel like a real working girl [hardly!] having to wake up and go to work again in the a.m. Where did the weekend July go!? Only 2 more weeks at home [SAD face].

Have a great week!

Q: Are you a 3 square meal kind of eater, or a frequent snacker/grazer?

I love roasted broccoli! I am a snacker, no doubt. And talk about the summertime flying by. Before we know it – it’s going to be New Year’s Eve, eek!

3 squares all the way! I never feel completely satisfied unless I’ve had a substantial meal on a plate.

P.S. I never responded to your email, but…I won a HLS ticket off the waiting list! The only problem is that I have to go to a family wedding on Saturday night, so I’m likely just going to attend the morning activities. I only live a train ride away from Chicago, so it shouldn’t be too much of a hassle leaving a bit early! I’ll keep you posted :-D

Wow…that meal looks great!

I’m a huge fan of either a fabulous Sunday breakfast or dinner! Just depends on the day as to which we have!

I am a three meal eater with two snacks in between.
I wish I could snack all the time, but it does not work for me. Actually it makes me exaggerate the amounts and lose control of what I am eating!

Have a great Monday!
