Mama Hill Does It Again

Three posts in < 24 hours!? [#1: Foodbuzz Beerbuzz and #2: My Life List] That’s what you call my type of procrastination. You know what else I do to procrastinate? I clean and I bake! [There’s a reason they call me Mama Hill.] I woke with a full tummy today – erg – but that didn’t mean I wanted to postpone my planned a.m. baking. It just meant I didn’t dive straight into making myself breakfast, as I usually do.

I’ve been wanting to redeem myself from my recent baking flop making Autumn Apple Flax Bread. I also wanted to give my new orange loaf pan a second chance, and because I match my dishes to my food, I opened up another can of organic pumpkin and introduced it to a few new friends: all-purpose flour, sugar, eggs, and chocolate. You can’t go wrong with classic ingredients.

Cinnamon Chip Pumpkin Bread

My Dear Roommate: “This tastes really unhealthy”, as she slathers a slice with butter.

Me: “Why?”

My Dear Roommate: “Because it’s reeeally good.” 

It isn’t all that unhealthy. I think she’s just gotten accustomed to there being flax, oats, and whole wheat flour in just about everything I bake ;)

  • 1 c. all-purpose flour
  • 3/4 c. whole wheat flour
  • 1/2 T ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. sugar
  • 1/2 can pumpkin
  • 1/2 c. canola oil
  • 1/3 c. water
  • 1 tsp. vanilla extract
  • 2 large eggs
  • 2/3 c. semisweet chocolate chips

In a large bowl mix together flours, spices, baking powder + salt. In a another bowl, whisk together sugar, pumpkin, oil, water, vanilla + eggs. Stir in chocolate chips. Spread evenly into a greased 9×5 loaf pan and bake at 350* for 50-60 minutes.

As soon as the bread went into the oven, I got straight to business cleaning. Between breakfast and dinner, I: did the dishes, cleaned the icky microwave, washed and folded four loads of laundry, washed Little Blue, vacuumed Little Blue and cleaned her carpets, scrubbed the shower, swept the porch, emptied the trash, recycled, cleaned my make-up brushes, and vacuumed the house. Somewhere in between all that, I enjoyed a warm piece, or two, of pumpkin bread – it was a success!

Baking + cleaning… nothing like productive procrastination.

Hope y’all had a lovely fall day. I think I’ll finally crack down on my school tasks, and then crawl into my clean sheets. Yay for an extra hour of sleep tonight!

Baking is my favorite form of procrastination. It’s too bad my Mom is starting to catch on…
Now it’s like:
Mom: Erika, Study!
Erika: Wellllll… I was gonna bake some cookies!
Mom: No. You’re gonna study!
