eleven eleven.

Hi there! Happy 1.1.11, as in January 1, 2011! Writing two thousand eleven is sort of fun, don’t you think?

If today was any indication of what 2011 has in store, then it’s going to be a good year! I had a really enjoyable day being lazy relaxing. Hey, it’s a holiday! I didn’t get out of my pink polka dot pajamas until late in the afternoon, to which I then changed into other comfy clothes.

The town was rather quiet today, but thankfully the co-op was open so I could raid the bulk bins. I was in need of a fresh batch of granola.

cinnamon vanilla granola.

  • 6 c. rolled oats
  • 1 c. unsweetened coconut
  • 1 c. pumpkin seeds
  • 1 c. sunflower seeds
  • 1 c. walnuts, coarsely chopped
  • 1 c. pecans, coarsely chopped
  • 1/2 T cinnamon
  • pinch of salt
  • 3/4 c. agave syrup – raw, light
  • 3/4. c. canola oil
  • 1 T pure vanilla extract

Preheat oven to 350*. In a large bowl combine oats, coconut, seeds, nuts, cinnamon, and salt. In a separate bowl, mix agave, oil, and vanilla. Pour over oat mixture and stir thoroughly. Pour into a glass baking dish and spread evenly. Bake for approximately 30 minutes – stirring every 10-12 minutes – until lightly golden. Remove from oven and spread onto paper towels to cool completely before storing in an air-tight container.

This batch was a lot more wet/sticky than my recent Christmas Crunch Granola.

wet raw granola = clumpy cooked granola = deliciousness …make sense? ;)

Before raiding the bulk bins, stocking our fridge with fresh veggies, running my first five miles for the year, and writing a few thank you notes, I made a most-spectacular latte… or cafe au almond lait to be exact.

Looks great! I haven’t made granola in a while, but that could all change in 5 minutes when I walk into the kitchen, bahaha…thanks for the idea!!

haha I love you.
I take pics of my food in different places to try differnet lighting, but I only use the good lighting ones!
All yours are good lighting, but I loved how you showed every single setting! haha
Is it the cup, or are those ACTUALLY the layers of the latte? It looks kinda fake.

Okay – I’m a granola fanatic! I just made some myself yesterday, putting a little apple cinnamon action into my regular stuff. I’m going to post my recipe on my blog soon, but I’m thinking another batch of granola from your recipe will come out of my kitchen soon. Thanks!
