almond apricot {energy} bites.

Hey there!

Hope your week has started off well. It was a rainy June day here, but warm sunshine is in the forecast – I can’t wait!

I hit up the gym mid-afternoon for my workout:

  • 60-minute yoga class
  • 20-minute treadmill walk

2.0 incline – 5 minutes ea. @ 4.4mph/4.8mph

4.0 incline – 5 minutes ea. @ 4.4mph/4.8mph

  • 20-minute cycle [7.1 mi.]
  • 5-minute jump-rope

It was almost 3:00pm before I scrounged up a late, light lunch (I’m in need of groceries again). I was saving room for a special dinner out at Sierra Nevada Brewery for my friend’s birthday – yum!

  • low-fat cottage cheese, 1/2 apple, strawberries, raw walnuts & a drizzle of honey
  • 1 slice of TOASTED TJ’s Complete Protein BREAD with hummus, red onion & cucumber
  • iced green tea

Then as I was baking up another batch of Dark Chocolate Cherry Pistachio Cookies, I decided to whip up a batch of balls ;)

Almond Apricot {Energy} Bites

  • 1/2 c. raw almonds

  • 1/2 c. pitted dates, roughly chopped

  • 1/4+ c. dried apricots, roughly chopped

  • 1T unsweetened coconut

  • 1T chia seeds

Pulse all ingredients in a food processor*. Roll into balls. Store in a cute glass jar in the refrigerator.

Makes 8-10 balls.

*Note: I used a blender which doesn’t puree the ingredients into as fine a mixture as does a food processor.

I love having these on hand for a small snack between breakfast and lunch, or for easy-to-digest pre-workout fuel. These are vegan and g-free!

I love the idea of putting chia seeds in energy bars/bites — I can’t wait to try these! (that is, once I get some dates!)

I love the idea of apricots in these. I’ve seen a ton of variations on these “balls”, but I’m really intrigued by this one, looks delish!

YUM. Those little guys look so delicious. And I love the many varieties you can make with those. I tend to skew a little less healthy (think peanuts and chocolate chips!) but those looks so yummy as well. Ya can’t go wrong with apricots :)
