Good mornin’!

I wanted to pop in and say hello early today as I have a busy to-do list to conquer. The best ”chore” on my list is to bake cookies – stay tuned for a new Cookie Friday recipe! Of course, I had to fuel up properly for my semi-busy day…

Simply Summer Strawberry Oats

  • 1/2 c. unsweetened vanilla almond milk + 1/2 c. water
  • 1/4 c. oatbran
  • 2 T rolled oats
  • 1/2 ripe banana
  • 1 T roasted flax almond butter
  • splash of vanilla
  • farmers’ market strawberries, ~1/2 tsp. chia seeds

My new favorite thing to do is stir in the nut butter at the end of cooking, rather than adding a dollop to the top of my bowl – thick, creamy, nutty oatmeal with every bite!

California strawberries are amazing right now. We’ve been getting them in our CSA box for the past few weeks (from an organic farm). They’re wonderful!
