simply summer {strawberry} oats.

by Hillary on June 9, 2011

Good mornin’!

I wanted to pop in and say hello early today as I have a busy to-do list to conquer. The best ”chore” on my list is to bake cookies – stay tuned for a new Cookie Friday recipe! Of course, I had to fuel up properly for my semi-busy day…

Simply Summer Strawberry Oats

  • 1/2 c. unsweetened vanilla almond milk + 1/2 c. water
  • 1/4 c. oatbran
  • 2 T rolled oats
  • 1/2 ripe banana
  • 1 T roasted flax almond butter
  • splash of vanilla
  • farmers’ market strawberries, ~1/2 tsp. chia seeds

My new favorite thing to do is stir in the nut butter at the end of cooking, rather than adding a dollop to the top of my bowl – thick, creamy, nutty oatmeal with every bite!

Going to finish my iced coffee and get “doing”…

California strawberries are amazing right now. We’ve been getting them in our CSA box for the past few weeks (from an organic farm). They’re wonderful!

Yum, this sounds so good. Thanks for the tip on adding the almond butter at the end.

Strawberries are my favorite fruit in oats. They’ve been so big and juicy recently. Perfect for summer!
