Hello again!
Hope y’all had an enjoyable weekend. I did – relaxing, but semi-productive. Now it’s time to prepare for Week 6. School is in high gear – group projects galore, weekly nutrition club responsibilities, and I have my first exam this Thursday.
Being busy busy doesn’t stop me from eating a nutritious, whole foods, (mostly) plant-based diet though. I got the idea for the salad below from Living with Healthy Hunger and have been craving the dark, leafy greens almost daily. Just thought I’d share!
raw kale + black beans, avocado, creamy goat cheese, raw sunflower seeds, seasoned rice vinegar, olive oil & fresh black pepper – I dig it!
Eat More Kale.

I just realized that my kale consumption was rather low so that is exactly why I just stocked up. Love kale!

Eat more kale = my life mantra! And goat cheese, well, it was made for salad, don’t you think? Mmmmm…
Isn’t it amazing how a simple salad can look so beautiful? I’ve had a hard time eating kale so far, but I might just have to try this salad out!
