Meal Plan | Week of February 17

I can totally see how it can be addictive. I’m having a lot of fun with this whole meal planning thing. My first week with an official meal plan went swimmingly. I didn’t make the Quinoa-Stuffed Bell Peppers, so that is on tap for today’s Prep Day. I think they’ll make an excellent lunch candidate. It’s the roommate’s turn to make dinner this week, so I’m off the hook for one meal. 
 
My weekly plan includes yesterday’s tasty homemade pizza dinner and my prep day today:

I love meal planning! It really helps me to budget out my money at this point in my life and make sure that I use what I buy. Although, I don’t make any fancy graphics… yet. I may just have to start doing that over using Google Drive!

Mmm avocado toasts sound yummy! Today the star of my lunch was a PB and J with minimal jelly and lots of fresh blackberries, banana slices and dried cranberries for sweetness :) hmmmm…cheese, and some kind of wheat or seed cracker instead of a sandwich is always a fun idea too!
