Yesterday was Prep Day according to my weekly meal plan, and I had three items to take care of. One of which was a batch of muffins. Despite shopping at three grocery stores Saturday (my kind of fun!), I set out to the fourth in search of raspberries. This recipe had to be made.







almond meal – coconut oil – eggs – extra-dark chocolate chips – raspberries
I came home with a $4.99 pint of organic raspberries and crossed my fingers I wouldn’t fail the expensive ingredients (a.k.a. end up with a dozen muffins in the trash).
That has happened more than once, truth be told.
This recipe isn’t exactly budget-friendly, but every bite is worth the splurge. Promise.

Of all my muffin recipes, this one just stole the top spot.
You could wait ’til summer when berries are actually in season and won’t cost a pretty penny…
but that would just be silly talk.

Oh my goodness these look FANTASTIC! I wish I had the ingredients to whip these up quick tonight before I head out of town for a work conference the rest of the week. Next time :)
