Apple Dijon Vinaigrette

I used to loathe making salad dressings. I couldn’t tell you why.

Whenever my family was hosting a dinner party, I always delegated the dressing duty to my mother.

She had the magic touch.

Making salad dressing was just the nagging task in the kitchen I did not want to be bothered with.

A bottle was so much easier… and I was perfectly content with olive oil and balsamic vinegar.

I think it was this past Thanksgiving, when I was on salad duty, that I concocted this recipe.

I wasn’t about to pour store-bought dressing on my contribution to the meal of all meals – oh, the horror.

Now, although I still stock a bottle of Annie’s in my fridge, I’ve thrown together this easy, 5-ingredient vinaigrette a handful of times. 

A tangy delight, it will dress up the simplest of salads… 

or add that extra hint of homemade to your most gourmet.

This is a true foodie run-home-for-lunch Monday meal… not too shabby, eh?

I am such a such an oil and vinegar girl; I can’t seem to like any other dressings.

I made this dressing today and it was excellent! I made roasted cauliflower and leek soup, and was expecting that to be the main event, but I ended up liking my salad so much more!

I don’t know why I never think to make my own salad dressings. I really need to start doing this to save money and to be healthier. Who wants those preservatives anyways? Thanks for the recipe :)
