We all know I “have a thing” for homemade granola. I believe I have more granola recipes on Nutrition Nut than I do of any other sort. Baking granola is entirely satisfying as it requires zero culinary skills, albeit some simple measuring.
While I love holiday baking, I am afraid to say I’m sort of spent on sugary cookies and the such. Enter slightly-sweet, crunchy granola with fiber-ful oats, heart-healthy olive oil, iron-rich molasses… and digestion-friendly ginger.
Classic gingerbread spices – cinnamon, nutmeg, and ginger – add holiday flair while pure maple syrup gives the clusters a touch a sweetness without the gluttony.
