Carrot Raisin Bran Muffins
Recipe adapted from Muffins by Cyndi Duncan & Georgie Patrick.
- 1 1/2 cups flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt – optional
- 1 1/2 tsp. cinnamon
- 1 cup Raisin Bran
- 2 eggs
- 3/4 cup oil
- 1/2 cup + 2 T brown sugar
- 2 T molasses OR agave
- 1 1/2 cups grated carrot
- 1/4 cup chopped walnuts
Preheat oven to 350F.
In a large bowl, combine flour, baking powder, salt and cinnamon; add Raisin Bran.
In another large bowl, beat eggs, oil, brown sugar and molasses/agave; stir in carrots and walnuts.
Combine egg and flour mixtures until just moist.
Fill muffin cups with 1/4 cup of the mixture. Bake for 20 mintues.
