Fruit 'N' Nut Chocolate Chunk Cookies
Recipe courtesy of Epicurious.
- 2 1/2 cups all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 eggs
- 9 oz. semisweet or bittersweet chocolate
- 3/4 cup dried apricots, chopped
- 1 cup dried tart cherries, chopped
- 1 cup pecans, chopped
***
Preheat oven to 375* F.
In a bowl whisk together flour, baking soda, baking powder, and salt. In another bowl, cream together butter and sugars until light and fluffy. Add eggs 1 at a time, then beat in flour mixture until just combined.
Chop chocolate into 1/2-inch pieces (I cheated with chocolate chips) and stir into batter with apricots, cherries, and pecans. Drop dough by heaping tablespoons about 2 inches apart onto ungreased baking sheets. Bake for approximately 12 minutes, or until golden. Let cool before scarfing down an entire dozen ; )
Makes about 36 cookies.
