Who is the Nutrition Nut?

 

I am: a long distance runner, a college student, a sister, a health enthusiast, a foodie, a baker, a dark chocolate addict, an optimist, and a bit nutty… I’m Hillary.

Welcome to Nutrition Nut on the Run, my personal blog about living on the healthy side of life. This little corner of the blog world is a place where I enjoy documenting my life by sharing my love for the written word, food, exercise, and the process of pursuing a balanced, fulfilling, and happy life.

What you will find here: real food, recipes (usually vegetarian), the stresses achievements and adventures of being a college student, and the strides I take running on and off the trail.

My hope is that this space will help to improve my writing and generate a playground for photography. As a current Food & Nutrition Communication student – 1 semester to go! – I am trying to practice what may be a part of my future career someday.

I believe that a healthy lifestyle is ultimately reached when one stops trying to be healthy and just lives healthy… and I like to think I am a good example of that :) As I share my life with you, I would love your respectful comments, advice, and discoveries.

More About The Nut

I will graduate May 20, 2012 with a B.S. in Food & Nutrition Communication.

I don’t travel without chocolate.

I eat vegetables as if they are going out of style.

I was voted Most Likely to Become a Famous Chef in my senior class.

I used to wear the label: “dancer/gymnast/swimmer”. Today it reads “runner”.

I am a California girl at heart.

The thought of breakfast is what gets me out of bed in the morning.

My favorite place to shop is the farmer’s market.

Owning a pink Kitchen Aid mixer is on my life list.

I once got 6 blue stitches in my chin as a result of “eating it” on a treadmill.

I lived in Children’s Hospital Oakland for three weeks. It changed my life.

I am nuts about nuts, and I am always on the run.

Your thoughts turn into actions.

Your actions turn into habits.

I just wanted to say how awesome it is that you are doing this! I am new to the world of food blogging, just discovered it a couple months ago and LOVE it! It’s awesome reading about your life and relationship with food, nutrition, and well being because I myself am working towards a Nutrition degree and eventually becoming a dietician so it’s great to hear about your struggles and triumphs in ochem and such while I am going through the exact same haha. anyways, thanks again for this. Hi Hillary, I just found your site via KathEats…I’m going to be starting college in the fall as a dietetics major and am really nervous that it will be nearly impossible to eat healthy living off of the dorm food…how did you survive your first few years when you didn’t have your own kitchen?

Hi Danielle -
Honestly, it was a little tough. I rarely ate in the dining hall, and spent too much money at the gourmet grocery store down the street. Unfortunately, I still gained the dreaded Freshman 15 despite avoiding the unhealthy eats =/ One year of eating a ‘not-so-ideal’ diet didn’t kill me though. Don’t worry about it too much. You will figure out the ropes and ways to make healthy meals. You’ll enjoy having a kitchen again, I’ll tell you that! =)

First of all, I love your blog and everything you do!

It’s never too late to go to CIA :)
I did my externship (it’s a 4 month internship at a restaurant somewhere in the world that’s part of the program) in Sonoma, CA, so I was able to see the campus. It’s beautiful! Especially because it’s in the middle of the vineyards. However, I might be a little partial to the Hyde Park campus. I’m in love with it.

Hillary,
It’s so inspiring to find fellow college students who place a high importance on their health, as it is a very rare thing in these years! I’ll admit, the temptation of pizza and beer got the best of me freshman year, but I am so glad I’m past that. And I think you hit it dead-on when saying that being healthy is the point where you stop thinking and obsessing about making healthy choices and it simply becomes second nature. I used to deny it when my friends called me a “health nut” (I’m not sure if I was embarrassed, or what?) but now I embrace it. So kudos to taking charge of our lives, our bodies, and our well-being :)
