Perfect Pumpkin Waffles

Dry:

  • 2 cups whole wheat flour
  • 1/4 cup sugar
  • 1 T ground flax
  • 1 T baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt

Wet:

  • 1 1/2 – 2 cups milk
  • 2 eggs
  • 4 T unsalted butter, melted
  • 1/2 cup pumpkin

Combine dry ingredients in a large bowl. In a separate bowl, combine wet ingredients. Add to dry. Stir just to combine. Pour ~1/2 cup of waffle batter onto the middle of a greased waffle iron. Cook 3-5 minutes. Top with anything imaginable!

Note: I think adding other spices to the mix [allspice, nutmeg, ginger] would give the waffles that “wow” factor.
