<p>I wanted to workout this morning, but didn’t know what form of exercise I wanted to do after my long run yesterday. While I thought about it, I gave <font color="#0080ff">Little Blue</font> a thorough bubble bath + vacuum [hey, that’s exercise – right!?], as well as caught up on my 3 loads of laundry from last weekend. </p>
<p>Still undecided about exercise, I ate.</p>

<p>Plain 0% Greek + 2 fresh figs + walnuts &amp; honey – mmmm!</p>
<p>After lunch and a couple hours at the computer <u>doing homework</u>, I was hit with the Sunday Slump. There wasn’t an ounce of energy to be found in my body. My throat hurt. I needed sleep. I knew then that fitting in an evening workout was out of the picture [hence the <strong>achy breaky heart</strong>]. My body was not game for raising its heart rate, so I laid on my feather bed until my eyelids began to drift closed. Can you see where this is going? Don’t underestimate the power of&#160; Sunday afternoon siesta. It wasn’t long, but it was just what my body requested. Half an hour later, I was mildly refreshed and ready to… eat. </p>
<p>Still not feeling 100%, I took the easy way out with dinner.</p>

<p>… and one of my favorite, college-style comfort foods ever: Annie’s Mac &amp; Cheese with a dab of real buttah, peas and creamy avocado. </p>

<p>Going to work on my never-ending pile of assignments, and then hopefully turn in to bed early. I have not been getting enough zzz’s and it’s starting to take a toll on me. I can’t let a lack of sleep prevent me from possibly having one of my greatest <a href="http://www.nutritionnutontherun.com/running/marathon-training/">training</a> seasons yet. I want to be exercising at least 5x/week, and that has not always been happening =/ </p>

<p>I went to the gym for the <a href="http://www.nutritionnutontherun.com/running/marathon-training/">7th day</a> in a row tonight. I didn’t go with much enthusiasm, or use my <a href="http://www.nutritionnutontherun.com/2010/08/23/its-all-about-attitude/">successful exercise tips</a>; consequently, I had a chill – though sweaty!! – workout.</p>

</ul>
<p>The weather isn’t suppose to be at sauna temperatures the next couple of days, so I’m double-crossing my fingers I can go for a run <em>outside.</em> A true runner can only train inside for so long before going stir-crazy.</p>

<p><font color="#000000">I’ve spent all day trying to write a post for <strong>Change The Way You See, Not The Way You Look Week</strong> in celebration of the <a href="http://operationbeautiful.com/">Operation Beautiful</a> book release. All week readers and bloggers have been participating in this exciting time for the positive post-it note movement by posting their personal experiences about body image, self-confidence, and the ultimate healthy balance so many of us strive for.</font></p>
<p><font color="#000000">I wasn’t able to get my story onto paper today. Whether it’s writer’s block or still a lack of self-confidence to share something so so personal to <em>anyone</em>, I don’t know =/</font></p>

<p><font color="#000000">All good things: black beans, sautéed onion, yellow bell, and zucc, white cheddar, avo, salsa, and blue corn tortilla chips – a satisfying, 10-minute meal.</font></p>
<p><font color="#000000">Where’s the Zucchini Parmesan recipe? I haven’t forgotten; bare with me as my blogging is all over the place. That delicious thing above was eaten yesterday. I know… what’s up? </font></p>
<p><font color="#000000">So… since I’m doing a horrible job talking about anything food related, shall we try fitness? I went for an afternoon run today. I rarely go for afternoon runs – it’s usually done early morning, or in the evening. Running in the Redwoods at 4:00pm made me feel like I was in high school at cross-country practice again. Ahhh, nostalgia. I <strong>ran for 50-minutes</strong>, then changed outta my sweaty shorts and tee into some stretching gear before I met my mom for a <strong>75-minute yoga class</strong>. I say it ev-er-y single time, and I’ll say it again, make me do more yoga pleaseee! The hilly run + hour of easy elongation paired each other perfectly.</font></p>

She obliged, and from that day forward I dreamt of green cake. I felt that a <font color="#c8f235"><strong>Chocolate Avocado Cake with<font color="#73b924"> Spinach</font> Whipped Cream</strong></font> was the perfect cake for my first birthday since joining the healthy living blogging community. The cake combines two of my most favorite foods: chocolate and avocado [I also love my leafy greens!]. </font></p>
<p><font color="#000000">You can probably imagine how many raised eyebrows I received when I would mention my excitement about my birthday cake to family and friends. Spinach in whipping cream? They acted as if it were illegal.</font></p>

The verdict… they really liked [loved?] it! The avocado made the cake especially moist, and although the cake was not super sweet, the chocolate flavor was rich just as I like it. My mom may have tossed in a few uncalled-for chocolate chips ; )</font></p>

<p>Do you see why I loveee mornings so so much? I go to bed dreaming about diving into another bowl of creamy, chewy, <em>healthy</em> steel cut oats… so maybe it’s a tad weird, but that’s how foodies roll, right?</p>

<p><font color="#000000">The other night when I realized I had all four of the ingredients to make <a href="http://http://www.healthytippingpoint.com/flax-encrusted-sweet-potato-balls">Caitlin’s Sweet Tater + Black Beans Balls</a>, I got super excited. They were ridiculously easy to prepare, and ridiculously delicious to eat. </font></p>
<h3><u>Sweet Tater + Black Bean Balls</u></h3>
<ul>
<li><strong>1/2 sweet potato, mashed </strong></li>
<li><strong>1/2 c. black beans, rinsed + drained</strong> </li>
<li><strong>3 T <em>organic</em> medium-heat salsa</strong> </li>
<li><strong>ground flax</strong> </li>
</ul>
<p>To cook the potato, pierce with a fork and then microwave for appox. 6 minutes until tender. Meanwhile, preheat the oven to 350*. Combine the mashed potato, black beans, and salsa in a small bowl. Roll into balls [should make between 6-8]. Spread the flax onto a flat surface and roll each ball in the seeds, to coat. Place on a greased baking sheet + let cook for about 20-30 minutes, depending on size. Enjoy with sour cream or Greek yogurt – yum!</p>

<p><font color="#000000">After the sweatiest <strong>1-hour spin class tonight + 1/2-mile jog</strong>, I came home stoked for sweet taters: round 2. I’ve made renditions of this salad quite a few times before, substituting the potatoes for squash, and either way, it’s quite the taste bud pleaser.</font></p>
<p><font color="#000000"><u>To make</u>: Peel 1 large sweet tater + chop into bite-sized pieces. Place in a small bowl, drizzle with real maple syrup, ground flax, cinnamon + coarse sea salt. Mix to coat. Spray baking sheet with chlorofluorocarbon <em>free</em> canola [or olive] oil and bake in a preheated 350* for appox. 30 minutes. Then place your hot taters atop a hefty portion of <em>organic</em> spinach, creamy avocado, chevre, and red onion. Finish it off with a drizzle of olive oil + balsamic and fresh black pepper. </font></p>

<p><font color="#000000">So… what have I been doing lately? Well, let’s see… <strong>s</strong>oakin’ up the sun + <strong>s</strong>weating a ton!</font></p>
<p><font color="#000000">I may be a California girl, but that does not mean I’m necessarily a summer/sun lovin’ girl. Perhaps a shock to some, but my body was raised in a climate that rarely exceeds 60* F, where rain is the norm most of the year, blue sky is received with a celebration, and you wear your winter coat to the windy beach. </font></p>

Then I got in my car and spent the next two hours stopping in places around town in hopes that the economy was actually allowing business to hire a poor college student. The verdict: s0-so. “We just did a big hire”. “We might hire in the middle of the summer”. That’s convenient – not! The job hunt ain’t over…</span></p>
<p><strong><span style="color: #000000">How have you successfully found jobs? Any winning resume/interview advice?</span></strong></p>
<p><span style="color: #000000">With just a couple resumes remaining in my stack, I headed home completely spent. I don’t know what was up, but my Monday morning drained me of all energy. I refilled my tank with a wrap, but unfortunately, it didn’t increase my Monday mojo. It sure was tasty though!</span></p>

I need a magical remedy stat because last night my BFF from high school texted me asking if she and her BF could come to visit. If you know me at all, spontaneity is my antonym, but I couldn’t turn down hanging out with my missed friend. Heck, it’s not like I have a job or anything… yet!</span></p>

I’d been wanting to use the remaining bit of quinoa I had in my cupboard from the <a href="http://http://www.nutritionnutontherun.com/2010/04/04/dont-miss-the-caboose-2/">last time</a> I cooked with it, and Allie’s recipe sounded right up my <span style="text-decoration: line-through">allie</span> alley. </span></p>

<p><span style="color: #000000">I have always loved making muffins… mainly because the process is a piece of cake. It’s usually one of the first techniques you’re taught in an elementary foods course. If you do not know how to make muffins “properly”, I’ll show you the way…</span></p>
<p><strong><span style="font-size: large; color: #000000; font-family: huxtable"><span style="text-decoration: underline">Cooking 101: The Muffin Method</span></span></strong></p>
<p><em><span style="color: #000000">1. Whisk the dry ingredients together with salt, sugar, leavenings and any spices in a large bowl.</span></em></p>
<p><strong><span style="color: #000000">Dry Ingredients:</span></strong></p>
<ul>
<li><span style="color: #000000">2 c. any flour [I used 1 1/2 c. whole wheat + 1/2 c. all-purpose] </span></li>
<li><span style="color: #000000">1/3 c. shredded unsweetened coconut </span></li>
<li><span style="color: #000000">2 tsp. baking powder </span></li>
<li><span style="color: #000000">1 tsp. cinnamon </span></li>
<li><span style="color: #000000">1/2 tsp. salt </span></li>
</ul>
<p><em><span style="color: #000000">2. In another bowl or a large liquid measure, combine all the wet ingredients – dairy, eggs, liquid fat, and any flavoring.</span></em></p>
<p><strong><span style="color: #000000">Wet Ingredients:</span></strong></p>
<ul>
<li><span style="color: #000000">3/4 c. shredded <em>organic</em> carrots </span></li>
<li><span style="color: #000000">1/2 c. unsweetened <em>organic</em> soy milk </span></li>
<li><span style="color: #000000">2 eggs, beaten </span></li>
<li><span style="color: #000000">1/3 c. agave-honey syrup </span></li>
<li><span style="color: #000000">1/4 cup unsweetened applesauce </span></li>
<li><span style="color: #000000">2T oil </span></li>
<li><span style="color: #000000">1 tsp. pure vanilla </span></li>
</ul>
<p><em><span style="color: #000000">3. Pour the wet on top of the dry and fold them gently together. Minimal mixing is key. Fold in any additional ingredients at this step (fruit, nuts, etc.).</span></em></p>
<p><strong><span style="color: #000000">Fold In:</span></strong></p>
<ul>
<li><span style="color: #000000">1 c. cooked quinoa</span> </li>
<li><span style="color: #000000">1/3 c. toasted chopped pecans</span> </li>
</ul>
<p><em><span style="color: #000000">4. Scoop your batter into well-greased (or paper-lined) muffin tins.&#160; Fill the cavities 2/3 to 3/4 full.</span></em></p>
<p><strong><span style="color: #000000">Sprinkle with raw sugar.</span></strong></p>
<p><em><span style="color: #000000">5. Bake according to recipe directions.</span></em></p>
<p><strong><span style="color: #000000">This batch took approximately 26 minutes @ 350*.</span></strong></p>

<h5>A well-made muffin has a medium grain and is slightly moist, tender, and light. It has a somewhat pebbled appearance and rounded top.</h5>
</li>
<li>
<h5>An overstirred muffins has a peaked top and tunnels [excess air is beaten into the batter, stretching the gluten matrix].</h5>
</li>
</ul>

<p><font color="#000000">After class this afternoon, I <em>attempted</em> to run outside. Key word: afternoon. I should have known…exercise in the middle of day is rarely a success for me. I gave it another shot though, and ran for <strong>20 minutes</strong> around campus and our track until I finally listened to the throbbing pain in my upper back and gave in to walking. I added another <strong>10 minutes</strong> to my watch as I made my way back to the gym where I did a thorough stretch. My legs are still unusually sore from Tuesday – what the heck! Hello, off week. You’re excused to leave now. </font></p>
<p><font color="#000000">Lunch was an exact repeat of <a href="http://http://nutritionnutontherun.com/2010/04/14/edamame-idamommy/">Wednesday’s eats</a>, because 1) today was a lazy day, and 2) why wouldn’t I want a very berry Green Monster &amp; jam-cheddar sandwich again?</font></p>

I ended up eating more cookies than I deserved, but then I thought about <a href="http://www.livelaugheat.com">Allie</a> and <a href="http://www.carrotsncake.com">Tina</a> who have admitted to eating 4 1/2 granola bars or half a dozen cookies themselves; then I didn’t feel so bad. <strong>How do you handle food guilt?</strong></font></p>

I made a smart choice in eating dinner [like I would miss a meal!] because it was nothing short of scrumptious!</font></p>

It was a first for me. <em>Honestly</em>, I wasn’t as impressed as I thought I would be. The almond extract was extremely overpowering and left quite the aftertaste. Yet, I’ll give it texture props. I’m hoping the PB + Chocolate flavor will</font><font color="#000000"> get a better score from the Nutrition Nut. </font></p>

<p><font color="#000000">My food lab was cancelled today, so I went to the gym during the time I would normally be cooking with my classmates. Working out in the middle of the day felt really off; as a result, my exercises weren’t all that energetic:</font></p>
