Everything Edible + Greek GIVEAWAY

Hello dearest readers. So close to Friday, aren’t we? I can almost taste it. Speaking of taste, let me share with you everything edible about my Thursday. I started my day with a bowl of pear-almond oatmeal — nothing you haven’t seen me eat before. I think I’m due for some new oatmeal combos [hint hint.]

1 cup water

1/2 cup rolled oats

1/2 d’anjou pear

1/2 T ground flax + cinnamon

almonds + agave

I had the house to myself again this a.m., so that meant blasting T.Swift and registering for Fall classes. I know…already? That’s college for you – ya never stop. Finally, after 6 semesters of registering for classes, it’s starting to get easier. I was able to get all the classes I needed; but, unfortunately, my schedule is all over the place. There’s always some bad with the good. Here’s what will be on my academic plate for Semester #7 [16 units in all].

  1. Human Physiology + lab
  2. Science of Food + lab
  3. Human Nutrition
  4. Foodservice Administration
  5. Consumer Health [online]

Before catching the bus, I threw a bar and an orange in my backpack…which would later become my lunch. I got this Honest Bar while in Sonoma over the weekend. It was a first for me. Honestly, I wasn’t as impressed as I thought I would be. The almond extract was extremely overpowering and left quite the aftertaste. Yet, I’ll give it texture props. I’m hoping the PB + Chocolate flavor will get a better score from the Nutrition Nut.

My food lab was cancelled today, so I went to the gym during the time I would normally be cooking with my classmates. Working out in the middle of the day felt really off; as a result, my exercises weren’t all that energetic:

indoor track run – 1.5 mi.

30 min. Arc Trainer

wimpy abs + arms

A little bit of different schedule today meant that I didn’t have to make dinner in a hurry, or eat at a ridiculously late hour.

I made blog-inspired sweet potatoes:

  1. Peel & cut sweet potatoes.
  2. Toss in a large bowl with a drizzle of olive oil, baby drizzle of maple syrup, cinnamon, ground flax and sea salt. [I measured everything with my naked eye.]
  3. Bake @ 325* for 20 minutes.
  4. Flip flop.
  5. Bake @ 350* for 10 minutes.

    I eat Greek yogurt everyday! Lots of times I eat it with granola and fruit. But I’m happy to eat it plain too!

    I make a cucumber tzatziki sauce with Greek yogurt – once I tasted Greek yogurt, I’ll never go back to Yoplait!

    I had an Honest Bar a few weeks ago and loved it! But, the flavor I got was cranberry and lemon zest or something like that. I’ll avoid the almond one. :)

    i absolutely LOVE to take the little caramel cups and stick them in the freezer! i’ll throw one in when i’m making lunch, then by time i’ve had lunch and want a treat, it’s fro-yo baby :)

    I love Oikos. I eat it as an afternoon snack everyday. Plain mixed with 1/2 cup of Kashi Go Lean, 1 tbsp of flax, 1/2 cup of frozen berries, and tons of cinnamon!

    This goes without saying, but a Greek yogurt + Kefir bowl!!! Chock full of my favorite toppings: banana, pecans, dried cranberries, granola and/or Kashi puffs, and flaxseed. Love in a bowl :)

    I love the Honest Foods bars. They are so good. I really like the PB Chocolate. For a while they were changing recipes and they were really hard and not so good.

    Oikos is seriously my favorite yogurt! I eat it almost everyday for lunch with strawberries and Galaxy granola mixed into the plain flavor of Oikos!
    I feel like I am void of protein on the day here or there that I don’t get to enjoy Oikos!

    Greek yogurt is the best! I use it in place of sour cream (tacos, yes please!) and as a snack with Grape Nuts and fruit.

It’s no secret that I suffer from chronic anxiety and panic attacks. Or at least I don’t intend it to be. Because while there can be a lot of shame and embarrassment around both of these, I know I’m not alone in my experiences. While I’ve leaned toward the more anxious side most of life, my bothersome anxiety has steadily increased since my mid-twenties - some periods being worse than others. 

It’s not a complete surprise that my mental health has taken a dip during my first full gloomy Seattle winter — in the height of a pandemic. 

Here are some ways I have been nurturing my body & mind as I work with a team of practitioners to work on understanding the **root causes** of my panic, and to live with more ease. 

» no coffee (not even decaf)

» meditating regularly - I’m using @insighttimer 

» gentle movement

» weekly therapy sessions

» attempting cold showers (this is hard for me!): if you’re interested, you can research how this impacts the nervous system

» working with a naturopathic doctor to focus on gut + hormone health

» trying a new Rx - a decision that took years of consideration

» lastly, opening myself up to vulnerable conversations/sharing my story and my experiences in efforts to reduce any shame and connect with others

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
