Flying High on Fiber

Hey Guys! It’s going to be another quickie post tonight. It’s already late and my alarm clock is set for 4:45am – eek! The day before I leave on vacation is always a little hectic for me, but today wasn’t actually all that stressful or chaotic thanks to a little pre-packing and 1 cancelled class.

I got my Waffle Wednesday started with a bowl of cold cereal. I don’t eat a lot of cold cereals – and when I do, the are usually consumed as late-night snacks [a not-so-great habit] – but I was in “clean-out the kitchen” mode. I finished off my unsweetened almond milk with 1 c. Organic High Fiber O’s, 1/2 of a ripe banana, 4 sumo strawberries, almonds & walnuts. It wasn’t as satisfying as a creamy bowl of piping hot oatmeal, but it still provided me with adequate a.m. nutrition.

Fast Forward.

After three days sans exercise, I finally had enough energy to do a wee bit of a workout. I started off with 15 minutes of yoga/stretching. My body is craaaving yoga… seriously, I need to get on the mat stat! After a few pigeon poses and downward dogs, I walked on the treadmill for 20 minutes [4.0 mph @ 5.0 incline] and ellipticalled [a new verb, obvi] for 10 minutes at resistance 10. Throw in a few abdominal exercises and I called it a day.

Dinner.

My goal for today was to eat up as much of my fresh produce as I possibly could. BINGO!

  • Dr. P Veggie Burger with the last of my homemade hummus & final 1/4 of avocado
  • Organic broccoli & cherry tomatoes sautéed in olive oil & garlic

Confession: I’m obsessed with vegetables. I think there might be a few of you out there who are with me on this one, no?

Ahhh…I gotta go. gotta go. gotta go. I must get some zzz’s!

    I love the look of that burger, infact all your food today looks great. I think you’ve definitely met your goal of eating all your fresh food! Enjoy your holiday, I still don’t know where you’re going!!!

    No shame – often if I have cereal it’s as a late-night snack, too! Cereal is great – but it just doesn’t do it for me in the morning.
    And – major veggie obsession here, too. Sometimes it’s fun to HAVE to do a fridge clean-out, no? :)
    Have a safe trip, can’t wait to see where you’ll be blogging from, but I have a hunch it will be GORGEOUS!

    The avocado on top of that burger looks BEAUTIFUL! Love me some avocado! I love yoga as well- I just finished up a class and it felt amazing.

    I’m really big into midnight cereal’s too. I agree it’s an awful habit. But luckly our addiction to veggies makes up for it!

    I am all for the night time cereal too. If I don’t have it for breakfast, then I almost certainly want it as an evening snack!

    Broccoli + tomatoes = cancer fighter! This makes me happy since I had that combo for dinner, along with some other random veggies. Yes, I am obsessed with veggies too – I love the way I feel after eating them. And…we share the late night cereal addiction. It’s horrible. I’ve gotten to the point where I am no longer buying cereal at all.

    Up until a couple of months ago, I would have thought you were crazy saying you love vegetables (I’m a super picky eater). But lately, I have been trying more and more foods, especially vegetables, and they have so much flavor and make me feel so good afterwards! So I can totally sympathize with you here.
