Waffle Wednesday Part I: From the Freezer

Good afternoon!

I realize it is many ticks past the breakfast hour, but Wednesday isn’t over yet, which means it is 100% acceptable to still be talking about waffles. It’s no surprise I l.o.v.e. me a good waffle, whether Belgian or crispy, homemade or from the freezer… I’m their #1 fan. Since the beginning of this blog’s history, there have been numerous sightings of frozen waffles. There have also been a handful homemade creations seen, but those will have to wait for Waffle Wednesday Part II.

As the Nutrition Nut on the run, frozen waffles are extremely convenient for mornings when I’m dashing to class. Yet, they serve other purpose as well — for example, when I’m tired of oatmeal (yeah, right!), or on a weekend when my laziness overrides my inner chef.

Most of my diet is comprised of fresh ingredients, as I try to steer clear from preservative-packed frozen foods; yet, I have no guilt when it comes to frozen waffles. That being said, I do buy Van’s all-natural, multigrain, organic versions. [They have some new ones out!]

Hmmm… I wonder what could possibly be my favorite waffle topping? Would you say bananas!? However, I have topped my waffles with anything from Greek yogurt and pears to banana scramble-stuffed sandwiches.

Truth: I did not celebrate Waffle Wednesday today =/ Did you?

  • What are staples in your freezer? Bananas. Bread. Butter. Chocolate Chips. Nuts. 
  • Waffles or Pancakes? Waffles, though I can never pass up my mama’s Grainy Pancakes.

    Oh that is a TOUGH question…I think waffles are calling my name right now but ask me next week I might say pancakes! I go in stages!!! :)

    yummy yummy waffles! I like waffles from the box, but pancakes from scratch :) …and when I do have waffles from the box, I eat Van’s too!

    In my freezer always = waffles, bananas, veggie burgers, vegetables, and the occasional frozen meal. What can I say? I’m a college student.

    As far as waffles or pancakes…I’d have to say waffles as well! Although, if the pancakes just happened to have bananas and/or chocolate chips in them, they might win. Add french toast to the contest, and there is absolutely no way I could choose.

    Also just wanted to say that I LOVE all of your food photos! Your blog is great, so bright and such an inspiration!

    Umm, who doesn’t love waffles? Seriously if someone told me they hated waffles, I wouldn’t know how to respond! Haha.

    I love Van’s waffles but my favorite are Kashi Blueberry. However, I can NOT find them anywhere anymore? Do you know if they discontinued them? So sad!

    Love all of these waffle combinations…we haven’t made them for a while here…I may have to eat some in the morning!

    I prefer pancakes over waffles…I don’t hate waffles by any means, I just would rather have a pancake!

    My daughter (20mos) eats Van’s frozen – straight from the freezer! If I want to give her strawberries or bananas with it, they have to be on the side! Weird, but convenient! Haha!

    We have waffles every Sunday (when we are all together) and I make them from scratch, along with my family’s butter syrup recipe, which I am sure you would NOT apporve of, but it is SO YUMMY! Guess I have to try Van’s, though…since you all say great things about it! Freezer: frozen berries for smoothies, coconut, veggies, bread, ice packs!

    this is the most gorgeous collection of waffle photos EVER! i love the one w/ apples. in my freezer i always have bananas and gelato. i like waffles, but loooooove pancakes.

    I just bought those Van’s waffles and am loving them. It is a great breakfast alternative.
    I love the idea of bananas and walnuts. Usually I just do pb and bananas – yum!

    I always keep extra frozen veggies in the freezer… and dark chocolate. Quite the combo, huh? :)

    And I’m actually more on a pancake girl… but maybe because I haven’t met the right waffle yet?

    I now have a huge craving for waffles. I was going to have pancakes as a treat after my race on Sunday but I might just change that to waffles with lots of fresh berries! Mmmmm!

    My freezer is stuffed with frozen berries. I think 99% of the space I take up is frozen fruit, really. :D

    And waffles, of course, always prevail over pancakes. Hah.

    I always have a hard time whether I want pancakes or waffles. It almost feels like waffles take more work, but they really don’t! I guess I like waffles better, but I always have pancakes.

    I have to say I’m a pancake girl (lately it’s been oat pancakes with almond butter and bananas, or today it was blackberry pancakes with raspberry vegan butter) but that might be just because I don’t have a waffle maker. I really, really want one. Your pictures make me want one even more! :) Can I ask what kind of camera you use? I’m in the market for a new one and your pictures are always amazing!

    Every single one of these combinations looks amazing!! I need to start buying frozen waffles. I usually just stick to my bowl of oats every morning, but after awhile that gets boring.

    Your waffle experiences look delicious. I am not a huge fan of either waffles or pancakes, but do get the odd craving from time to time. The way you prepare them definitely makes them appetizing!

    Staples in my freezer: veggie burgers, frozen bananas, frozen veggies, frozen yogurt & frozen fish.

    hmm… staples at my house? I’d have to agree on bananas, and bread (whole wheat or english muffins!), but also peanut butter, yogurt, eggs/egg beaters, apples, Amy’s Kitchen frozen meals, and…chocolate pudding :)

    and, waffles all the way! I’ve never been much of a pancake girl. I’d much rather have a toasty/crispy waffle than a soft pancake. Although… I prefer french toast out of all three :)

    Even though I’m normally much more of a pancake girl, this post has me craving waffles (and sadly I don’t have any in my freezer, nor do I have a waffle iron!) My freezer staples are definitely frozen bananas, yogurt, and other frozen fruit. You can make some pretty great smoothies with those ingredients and I never get bored.

As it turns out, staying in an itty bitty AirBNB for 6 weeks(!) while our floors got replaced wasn’t so bad after all. To be honest, I enjoyed the boujee South Tampa life much more than life in the suburbs. ⁣

I’ll miss walking to free community yoga classes in the village, neighborhood walks with Koba admiring the humongous, historic century old homes, treating myself to many @buddybrewcoffee matcha lattes just because, the 5 minute drive down Bayshore Boulevard to workout at the base gym, and more. ⁣
⁣
Sometimes, most times, it does us justice to shake up our environment. Because what at first seemed like it’d be a headache turned out to be a blessing in disguise — the gift of feeling C A L M when “home base” was in a season of transition. ⁣

Woke up early, had a cup of decaf, took Koba on a cool walk around the neighborhood, and then walked to @lululemon for their free Sunday morning yoga class. It was humbling to say the least.⁣

The sounds of the singing bowl while in savasana reminded me of my beloved classes with @lisaweberyoga and then strolling through the monthly farmer’s market afterwards... for a brief moment, I felt at home.

We’ve been temporarily out of our (rental) house since October 14 because the floors needed to be replaced. Nick’s been traveling a lot for work lately and Koba and I traveled to Colorado only to return to staying in an @airbnb for an unknown amount of time (of course a two week project is now looking closer to 4-5 weeks).⁣
⁣
We could be moving out of state soon, but that’s up in the air, too. 🤷🏽‍♀️ Needless to say, nothing really feels settled. Even though our house is completely gutted, most of our things are difficult to access, and I’m living out of my suitcase, Nick and I are oddly enough enjoying this AirBNB (appropriately named The Tree House) more than our home.⁣
⁣
While it is no bigger than a shoe box with a pint sized kitchen, we *feel better* here. Nestled in Old Hyde Park, I can walk the 3 blocks to my favorite local coffee shop for an iced oat milk matcha latte and window shop at @lululemon. Unlike the busy suburb in which we live, people are constantly outside walking their dogs, jogging, playing with their kids at the park, chatting with friends by the fountain. These little things all bring me a silly amount of joy.⁣
⁣
It’s often during times of change and uncertainty that I recognize the important things — the shit that matters. ⁣
⁣
I recognize my ability to be flexible when I am a homebody at heart. I recognize my longing for community and that small town, local vibe. I am grateful for my jobs that allow me to work from literally anywhere, and I feel really lucky to have Nick and Koba by my side. One day, sooner than later, we will look back and laugh at these Florida memories. 🌴⁣
