Good 4 U Granola

Despite the cool temps around here this summer, I’ve been craving a lot of cold cereal with fresh blueberries. Bye bye hot oats, hello cold ‘n’ crunchy cereal. I recently found a new granola that I like, Nature’s Path Agave Plus. After polishing off the box, I decided to make a version of my own. Have you ever made granola? Oh boy, it makes the house smell divine!

Recipes of the past:
  • Humboldt Honey Granola
  • Cheery Cherry Almond Granola

I really enjoyed this simple granola, but my homemade version is 18x better. What the heck are tocopherols anyway?

Good 4 U Granola

  • 4 c. rolled oats
  • 1 c. raw sunflower seeds
  • 1 c. chopped pecans
  • 1/2 c. unsweetened coconut
  • 1/4 c. ground flax
  • 2 tsp. cinnamon
  • pinch of salt
  • 1/4 c. + 2 T canola oil
  • 1/4 c. + 2 T agave
  • 1 T vanilla

Mix together the dry ingredients in a large bowl. In a separate, smaller bowl, mix together oil, agave and vanilla. Pour liquid over oat mixture and combine thoroughly. Place onto a baking sheet in a thin, even layer. Bake @ 350* for 30 minutes, stirring ever 10 – be careful, it burns easily.

It’s also quite delicious layered with 0% plain Greek yogurt and fresh b-berries, along with a Banana Chocolate Coconut Muffin. However, this tasty breakfast didn’t do my hunger justice after a hilly ‘n’ chilly 52-minute run. When’s lunch?

An Oat Note:

    Love Nature’s Path Hemp Plus granola. Perfect combo with greek yogurt, but I agree about not getting filled up on it.

    yum… i see pecans, cinnamon, vanilla and coconut all in one recipe. 4 of my favorite ingredients!! :) i love that you’re so creative! i wish i could come up with recipes like that, haha.

    Love blueberries with my cereal! I’ve been eating them like crazy too. I just made some blueberry muffins this morning.

❷⓿❷⓿ - moved clear across the country to ❷⓿❷⓿

- moved clear across the country to a new state for the second time
- hopped from one AirBNB to the next for 6 weeks while looking for a house to call home
- made new friends, virtually & IRL
- binge watched more TV shows than I can recall
- leveled up as an entrepreneur: hitting milestones with my virtual assistant and @beautycounter businesses
- voted for a new president 
- ascended new trails and explored alpine lakes of the Pacific Northwest 
- adapted: to Zoom holidays, takeout, and masked faces becoming the (temporary) norm

This challenging year was all about appreciating the little things while living through some really BIG things. 2020 had more than a few lessons to teach us all. Through a pandemic, pivotal change in presidency, and loud cry for human rights, I see very clearly how privileged I am. It was the year to let go of plans and lean in to a new perspective. 

After all, hindsight is ②⓪②⓪.

Best thing about 2020... for me, it’s been relationships - virtual and IRL.⁣⁣

Wendy and I met here on IG, and what started as a business relationship and accountability partner has turned into a special bond that transcends any walkie-talkie or social media app. This creative spirit has not only inspired me to get after it and dream bigger as an entrepreneur, but in the same way has encouraged me to honor rest and play: whether it’s giving each other kudos on Strava for tackling a run, building badass business plans and packages, or simply holding space to share the wins and the many woes, personally and professionally, of a memorable year. Having Wendy in my corner has led to some serious momentum and a sense of consistent community.⁣⁣
