I Love You, Grains and Greens.

I didn’t think I’d be hungry after eating the day away, but when 6 o’clock rolled around, I was hungry for dinner. Listening to my body, I headed into the kitchen and put together a meal that you probably wouldn’t see in any other ‘normal’ college kid’s kitchen.

There are no words to describe how much I love healthy food. I do not forcefully make myself eat this healthy – I just L.O.V.E. vegetables so so so much. Call me nutty… but a very healthy nut, I am.

My mason jar got a lot of lovin’ today.

Not long after cleaning my dinner plate, I pulled the berry colander from the fridge, and the chocolate chips from the freezer.

Yes, you bet that is a mug of melted semisweet chocolate chips… and you can bet some of those s-berries took a dunk in that swimming pool of rich, dark chocolate.

I just poured myself a second cup of green tea. I don’t know what was up with my hunger today, but I ate an awful lot of [healthy] food for only 32 minutes of physical activity. My Sunday is a bit busier than today was, and hopefully the eats will be a bit lighter too.

If the weather is suitable, I may go for another outdoor run in the morning. Speaking of running, I signed up for a race! I’m going to run the Chico Ten on September 18th at the park that’s just a few minutes away from my house. I used to run races rather regularly, but it’s been months since I’ve participated in one. I think this 10-mile run fits in nicely with my half-marathon training. Yay, I’m really looking forward to my fall races! : )

Reading, writing, online quizzes… such an eventful Saturday night.

    Mmm your dinner looks awesome! I know what you mean about loving healthy foods – my tastes have totally changed, and now I’m always craving “healthy” foods :) So good!

    Dinner looks wonderful! I know what you mean about craving healthy foods — my body just wants them (and of course, sometimes it wants pizza too, but mostly I want healthy things!).

    I’ll be doing a half-marathon in October and possibly a 10k here in a couple weeks! After that, I’m playing it by ear :)

    I’m running my very first race on September 18th as well. It’s a 5K run and I’m a teeny bit nervous, but know I can do it :)

    I feel the same way about vegetables. It’s an odd love to many, but for me, they are my number one on my plate! ;)

    Your dinner looks so good!! I’ll have to give those burgers a try. I’m a college student too, and I have tonssss of veggies and fruit in my pantry, so I’m right there with ya ;)

    That quinoa combination looks divine. I have a 10K and half-marathon this fall. Hopefully by next spring I’ll be ready for a few big bike rides too.

    That tomato looks awesome! It makes me sad to think that they’ll eventually be out of season… I guess we better eat ’em while we can get ’em!

    I’ll be running a 5k in fall… as soon as I finish my Couch to 5k Training! :)

    That tomato looks AMAZING! And I’m with you…I do love the odd indulgence, but delicious veggies and fruits are definitely the best…that quinoa, edamame and chevre combo sounds perfect!

    fantastic eats. i had a veggie burger and quinoa tonight, too… plus a luna bar, carrots, cereal, 2 apples… i should probably stop before i embarrass myself – lol.

It’s no secret that I suffer from chronic anxiety and panic attacks. Or at least I don’t intend it to be. Because while there can be a lot of shame and embarrassment around both of these, I know I’m not alone in my experiences. While I’ve leaned toward the more anxious side most of life, my bothersome anxiety has steadily increased since my mid-twenties - some periods being worse than others. 

It’s not a complete surprise that my mental health has taken a dip during my first full gloomy Seattle winter — in the height of a pandemic. 

Here are some ways I have been nurturing my body & mind as I work with a team of practitioners to work on understanding the **root causes** of my panic, and to live with more ease. 

» no coffee (not even decaf)

» meditating regularly - I’m using @insighttimer 

» gentle movement

» weekly therapy sessions

» attempting cold showers (this is hard for me!): if you’re interested, you can research how this impacts the nervous system

» working with a naturopathic doctor to focus on gut + hormone health

» trying a new Rx - a decision that took years of consideration

» lastly, opening myself up to vulnerable conversations/sharing my story and my experiences in efforts to reduce any shame and connect with others

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
