Monday Life of Your Aspiring Nutritonista

Know what? I didn’t exercise today. Fancy that! You know what I did do…

    • Physio lecture.
    • Library study sesh.
    • Phsysio lab.
    • Starbucks study sesh.
    • Human Nutrition exam.
    • Science of Food lecture.
    • Sit in the warm sunshine while waiting for the bus.
    • Collapse on my bed –> 45 min. nap.
    • Nutrition & Food Science Assoc. meeting
    • Eat a bowl of beans.

Productive Monday – check. I may not have exercised my muscles heavily today, but I exercised my brain to exhaustion. I’ve got another packed day tomorrow, but overall this week isn’t as insane as was the previous. I’m clear of exams until…

Speaking of exams, I thought since I am a Nutrition major, and this blog supposedly focuses on nutritious eating, I thought I would share a few things that I learn in class from time to time. Sound good?

So, here’s a quiz for you:
1. What are the recommendations for percent of total calories from carbohydrate, protein, fat?
2. How many calories of energy/gram do each of the following provide: carbohydrate, protein, fat?
3. What is the leading cause of death in the U.S. today?

I’ll provide the answers in my next post : )

Race Update:

I told ya’ll I’d update you with my official time from my weekend race. Well, the times were finally posted, but excuse me… I am not “Age: 33”. I called the event coordinator to make this known, and am now anxiously waiting for the corrected results [there were some other mishaps, too].

At this point…

Time: 1:18:49 – slightly slower than my watch

Place: 51/143 – small race!

    Tomorrow, I’ll be in the same boat…tons of class/studying and no time to run! But it’s ok to balance the exercise between brain and body :)

    As for your quiz…
    #1 not sure, I think I remember reading about 30/40/30?
    #2 carb and protein are 4, fat is 9
    #3 heart disease, or whatever the official name for the health problem which is the umbrella for all things related to being overweight (high BP, high cholesterol, type 2 diabetes, etc.)

    Not so bad for a chemical engineer(ista) =P

    1. Oooh, okay, this one is tough to remember… I think: Carbohydrate: 40%, Protein: 30%, Fat: 10%
    Ahh, I know that’s not right. I forget! Bad Nutrition major, bad Nutrition major!

    20-25% fat, 9 calories/gram
    45-65% carb, 7 calories/gram
    10-35% protein, 7 calories/gram

    1) 50% carbs, 20-25% protein, and 15-20% fat

    2) both carbs and protein provide 4g of energy and fat provides 9g

    3) I would say heart disease.

    I took Nutrition last year and I think it’s something like 65% carbs, 20% protein and 15% fat. Or at least fluctuating in that percentage range.
    And the trick I learned with the amount of calories for each is the magic number… 494! It means 4kcal/g for carbs, 9 for fat and 4 for protein.
    And lastly, I’m pretty sure it’s cardiovascular disease. I remember studying a lot of this from nutrition class! I loved it!

    Hi girl! I just stumbled across your blog – I love it! You have so many great recipes. I have never once thought of putting yogurt with coconut! Definitely going to be tried out soon! =) Really looking foward to reading!

    You should have more quizzes… for some reason they are more fun when you aren’t being graded :)

It’s no secret that I suffer from chronic anxiety and panic attacks. Or at least I don’t intend it to be. Because while there can be a lot of shame and embarrassment around both of these, I know I’m not alone in my experiences. While I’ve leaned toward the more anxious side most of life, my bothersome anxiety has steadily increased since my mid-twenties - some periods being worse than others. 

It’s not a complete surprise that my mental health has taken a dip during my first full gloomy Seattle winter — in the height of a pandemic. 

Here are some ways I have been nurturing my body & mind as I work with a team of practitioners to work on understanding the **root causes** of my panic, and to live with more ease. 

» no coffee (not even decaf)

» meditating regularly - I’m using @insighttimer 

» gentle movement

» weekly therapy sessions

» attempting cold showers (this is hard for me!): if you’re interested, you can research how this impacts the nervous system

» working with a naturopathic doctor to focus on gut + hormone health

» trying a new Rx - a decision that took years of consideration

» lastly, opening myself up to vulnerable conversations/sharing my story and my experiences in efforts to reduce any shame and connect with others

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
