‘Twas not too terrible of a Tuesday… actually, it was a rather enjoyable last day of summer. Say what!? Yep, did you all realize tomorrow the calendar turns to fall!? Indeed it does. My summer has long been gone, but I have been squeezing the most out the late summer sunshine and its beloved fruit harvest. It makes me sad to think that some of my favorite summer treasures – like peaches and heirloom tomatoes – will be disappearing from the farmers’ markets momentarily, but I have many things to look forward to for the fall months. It is my most favorite season, after all!

My morning class was cancelled this morning – grrr. Being on campus already, I decided to get my workout out of the way early. However, I was counting on using the time sitting in class to digest my hearty bowl of oats – I really dislike exercising on even a semi-full tummy – but thankfully, it turned out to be a decent Running Tuesday.

  • 1 mi. indoor track run
  • 30-minute treadmill run

28 minutes @ 7.0mph [10 minutes @ 0.0, 10 minutes @ 1.0, 8 minutes @ 2.0 incline]

2 minutes @ 8.0mph

  • 1.5 mi. indoor track run
  • planks + stretchinggg!

Total: 6.05 mi. @ 54 min.

Gotta go prepare for another Wednesday… working the Nutrition Club booth at the student farmers’ market tomorrow, amongst the usual classes, and then my favorite activity of the week: WRECPump!

    Wow, I didn’t realize it was the last day of summer today! Here in MN, it definitely has felt like fall for the past couple weeks. I’ve been totally enjoying the jeans and sweatshirt weather!

    No run for me today because I give myself a day or two off after my long runs on Sunday. My 9-miler this past weekend was definitely eventful (and just a little painful), so I gave myself two days off. I’ll be back at it tomorrow.

    Favorite things about fall? Oh, I have way too many. Here are a few of my favorite things: pumpkins, apple picking, sweatshirt weather, and the changing of the leaves!

    I ran to my gym, did a workout and ran back (1/2 mile each), which I’ve never done! Think of how that can add up over time :)

    While there are many great things about fall (football games, cool weather, corn mazes), I think my favorite thing about it is that it’s a chance to start over and make new goals. Who says you have to wait until New Year’s?

    I did run today! Unfortunately when I run, I only have about a half hour and it’s still dark out – at 5:00 AM! So, I’ve been heading over to the gym to run a quick 3 miles. It stinks because I love running longer and in the fresh air, but it’s all I can do right now!

    Those pancakes look delicious. I am running this morning. I plan on doing 50 minutes. I love love love the feeling after you finish a workout. I just feel so accomplished! =)

    Agh! I completed failed that quiz. I must have been thinking of alcohol for the 7 calories/gram (!). Ooopsies. I also forgot to answer the last question, but I knew it at least.

    I’ll miss summer produce too! And the abundant sunlight!
    No running for me today. It’s my second 13 hr. straight work day, so I figured a little extra shut eye would be better ;)

    I ran today too! 3 miles! I’m definitely looking forward to fall squashes. Butternut and spaghetti squash are my favorites.

    I also just bought some peaches at the store this week. They were really cheap…probably because they are going out of season, lol.

    I sure did run tonight! “20 minutes easy warm up, 12 X 1 minute at 5k pace/1 minute easy jogging, 20 minutes easy cool down”: time 1:04:25 for 13km (8.08mi).

    Fall favorite: PUMPKIN!!! I CANNOT WAIT!!!

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
