Learning to Live

The green light has yet to turn yellow or red. I may just as well be the Energizer Bunny. There are still no stop signs in sight. In other words, I apologize for keeping y’all hanging… after all, free coconut water is serious business. So, without further adieu, the four lucky random winners are:

Despite my lack of blogging, you can bet that I’ve still been eating, and that I’ve still been running. But, more importantly, I’ve been smiling a lot more… making the most out of every moment. I have done a lot of thinking and self-reflection recently about the grander scale of life, and am happy to report that I’ve been acting on those aspirations! Carpe diem.

The other day I scared the crap outta myself when I finally [1 week before race day] decided to check the course map of the 13.1 miles I’ll be running. Let’s just say my anxiety rose 3 fold – hello, Death Hill at mile 6. Although, I feel my training has made me a stronger runner/athlete, I haven’t been trainin’ no hills. It is a bit too late to do anything about it now either, as it’s taper time. I’ll do what I can do – my best!

Training continued at the WREC through Friday.

Five Mile Friday
  • 1 mi. indoor track run @ 8:40
  • strength training – abs, arms & legs
  • 1 mi. indoor track run @ 8:50
  • 3 mi. treadmill run @ 24:00 – yay!

Today, I ran around downtown – outside! – after strolling the farmers’ market. I should have planned the timing of my run better because it the sunshine was toasty this afternoon. I called it quits after a mere 22 minutes, but it was a pleasurable, autumn run nonetheless. I don’t wear my hardcore outfit everyday ;)

This week sometime [can’t remember when] I made the best OIAJ to date.

  • 1 c. water
  • 1/3 c. steel cut oats
  • ½ T flax Almond butter from the jar
  • 1 T pecans
  • 1 tsp. apricot jam
  • ½ fresh peach
  • cinnamon

FYI: I bought another jar of Trader’s Joe’s Almond Butter w. Flax today – exciting!

You know what else I bought at TJ’s today? Butternut squash ravioli – they’re new! These aren’t just any squash ravioli – oh no. They’re filled with amaretti cookies and apricot kernels – I couldn’t help but think of my idol, Giada!

Simple Saturday Supper: Butternut Squash Ravioli + drizzle of organic olive olive, fresh arugula, lavender chevre & fresh black pepper

 

I’m going to go… I’ve gotta get back to living my healthy life as a college student. After all, there will never be another today.

    Hills are my everest (literally). I have to say that a lot of the time, the elevation on the race map (especially when you see it that drastic) looks a lot more intimidating then it actually is on the day. Focus on the tunes, the adrenaline, and how hard you worked – and you’ll be in business girl :) Good luck this weekend!

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
