Stick a fork in me!

December 27, 2010 by Hillary 11 Comments

pear upside down gingerbread cake. berry trifle. homemade hot fudge. sour cherry & walnut scones. sweet sparkling pear cider. fluffy mashed potatoes. tamales. homemade English toffee. buttery cranberry orange bread…

Will you stick a fork in me and call me done already!?

Oh, but wait… we can’t forget this one. I’ve made this recipe twice in the last week for two separate holiday party appetizers. It was a huge hit… and super simple to make!

cranberry orange brie crostini.

Recipe Credit: Two Peas and Their Pod

  • 1 baguette, cut into 1/2 inch slices
  • 1 jar orange marmalade [~1 tsp. per baguette slice]
  • 1/4 lb. brie cheese, thinly sliced
  • 1 1/2 c. dried cranberries
  • 1 c. chopped pistachios

Preheat oven to 400*F.

Spread each baguette slice with about 1 teaspoon of orange marmalade. Next, add a piece of brie to each slice. Place baguette slices on a large baking sheet. Bake for 4-5 minutes, or until the brie is melted. Remove from oven.

Top cheesy baguette slices with a few dried cranberries and sprinkle with chopped pistachios. Serve warm.

I am clearly loving the red and green holiday combo of cranberries and pistachios this year – mmm! Well, I’m hitting the hay with a tummy full of Japanese cuisine and homemade hot fudge & roasted almond sundae…

Tomorrow’s Agenda:
  • run.
  • eat more food.
  • massage!
  • drive home [again].

I’m really looking forward to my regular ‘clean eats’, regular exercise, and regular feeling of being healthy. Can I get an amen?

Oh, but wait… then there’s our family’s annual homemade Doughnut Day.

Stick a fork in me!

More pistachios! Yeah! Those look like the easiest and most delicious appetizer :-)

Please don’t forget the beignets tomorrow. Wednesday is square doughnut day. Dough is in the fridge, slowly rising. Do you want to hold the layers of powdered sugar on yours? ;)

I’ve been eating normally the past two days, but I would happily eat some homemade doughnuts!

I love pistachios! I just made pistachio & date biscotti and was loving the Christmas color combo, too!

Yum! These little crostinis sound delicious. There are few things better in this world than fruit paired with cheese, and even better with pistachios. These would go great with my crushed cherry bellinis I’ll be serving tomorrow.

Happy New Year, Heather! I wish all good things for you in 2011!

such an idiot, I meant Hillary. I’m talking to my friend Heather on the phone right now. Obviously, I can’t and shouldn’t multi-task :-)

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste.

We went to all of these 3 places more than once during our quick stay - highly recommend!

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view!

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza!

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
