a wheaty surprise!

I guess I’ve never had true shredded wheat cereal before because after my 65-minute run with my friends Amy & Stacy, I came home eager to eat a bowl of cereal with my new find from the co-op and fresh batch of cinnamon vanilla granola.

I thought the cereal box was oddly shaped, but I didn’t think that there would be 18 huge biscuits of 100% whole wheat inside, hehe.

A BIG bowl of cereal for a hungry runner:

  • 3 biscuits
  • 1/2 c. cinnamon vanilla granola
  • 1/2 banana & raisins
  • 1 c. unsweetened almond milk

I bought another new variety of Barbara’s yesterday – gluten free Honey Rice Puffins – that I can’t wait to try!

Before heading to Costco this afternoon with my pops, I whipped up an energizing recipe that I’ve been wanting to try.

Cashew Cacao Energy Bites

Recipe Courtesy: [never home]maker

  • 1 c. steel cut oats
  • 1/2 c. raw cashews
  • 1/4 c. unsweetened coconut
  • 1/4 c. agave syrup
  • 1/4 c. cacao nibs

Put all ingredients – except the cacao nibs – in a food processor and blend. Add the nibs after a minute or two and pulse a few times. I suggest refrigerating the ‘dough’ for at least 30 minutes to make it easier to roll into round balls. Use a tablespoon to scoop out heaping amounts, roll gently, and place on a cookie sheet lined with wax paper. Refrigerate for a couple hours until firm.

I sampled a ball along with a half dozen dark chocolate espresso beans before hitting the super store. Costco’s greatness requires a lot of energy, didn’t you know? ;) I’m thinking a teaspoon of instant espresso powder in the next batch of balls!?

By the time we got home from a short – yet successful – trip to Costco, I was ready for lunch.

Vegan Veggie Wrap:

  • sprouted wheat tortilla
  • local hummus
  • tofu pan-fried in Garlic Gold olive oil + sea salt
  • butter lettuce & cucumber
  • drizzle local Tofu Tahini dressing
… with a crunchy carrot & lemon kombucha on the side.

The Kombucha Effect:

  • naturally detoxifying & energizing
  • helps strengthen immune system
  • aids digestion
  • regulates sugar levels and appetite

That’s all I’ve got for now. I have a long list of blog-related work I want to do while I’m free from school work, but I see homemade crab cakes and a movie in my immediate future tonight…

    I’ve never tried kombucha because I always hear about the fermentation and get nervous…I know, weird. Do you like its taste? Does it really help with digestion? If so, I should start drinking it!

      I haven’t tried many flavors, though I’ve enjoyed the ones I have tried. It’s an acquired taste, just like fermented wine ;)

    The energy bites look awesome – I never thought to put steel cut oats in recipes because it seems like they’d make cookies so crunchy. Maybe I’ll have to try these! Have a great rest of your break from school :)

    I’m currently in my post Christmas kombucha drinking state, for pretty much the reasons that you listed.

    I’ve had shredded wheat, but those round ones are cute…like haystacks!!

    Costco’s greatness definitely requires loads of energy. ;)

    I had no idea that true shredded wheat looked like that either. I picture it more along the lines of frosted shredded wheat!

    Those energy bites look delicious! I’ve had a Cuisinart for several months now and have yet to make any sort of bites or bars even though I’ve seen so many great recipes on blogs – I think it’s about time I make some. Also – I love that type of shredded wheat. I think it’s more fun to eat than the little shredded minis.

    Did you like that brand of kombucha? I really like GT’s brand but haven’t branched out. I think I’m going to make those energy balls this weekend!!

      Yes, I really like that kombucha. I’ve yet to try their other flavors though.

It’s no secret that I suffer from chronic anxiety and panic attacks. Or at least I don’t intend it to be. Because while there can be a lot of shame and embarrassment around both of these, I know I’m not alone in my experiences. While I’ve leaned toward the more anxious side most of life, my bothersome anxiety has steadily increased since my mid-twenties - some periods being worse than others. 

It’s not a complete surprise that my mental health has taken a dip during my first full gloomy Seattle winter — in the height of a pandemic. 

Here are some ways I have been nurturing my body & mind as I work with a team of practitioners to work on understanding the **root causes** of my panic, and to live with more ease. 

» no coffee (not even decaf)

» meditating regularly - I’m using @insighttimer 

» gentle movement

» weekly therapy sessions

» attempting cold showers (this is hard for me!): if you’re interested, you can research how this impacts the nervous system

» working with a naturopathic doctor to focus on gut + hormone health

» trying a new Rx - a decision that took years of consideration

» lastly, opening myself up to vulnerable conversations/sharing my story and my experiences in efforts to reduce any shame and connect with others

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
