Today is my last weekend day at home [I leave Friday], so I felt like a special Sunday breakfast was in order.
First, hot lemon water to start the day clean ‘n’ fresh!
Second, vegan coconut oat pancakes – oh yes!
Vegan Coconut Oat Pancakes
original recipe courtesy of: [never home]maker

1/2 c. whole wheat flour

1/2 c. rolled oats, processed into flour [put 1/2 cup oats into your food processor and pulse until flour-y]

1/3 c. unsweetened coconut

1/3 c. flax meal

1 tsp. baking powder
-
1 ripe banana, mashed
-
1 c. unsweetened vanilla almond milk
-
1 T agave syrup
-
2 T rolled oats
- Combine all ingredients in a large bowl [fold in the whole rolled oats after everything is sufficiently mixed].
- Add more almond milk if necessary.
- Oil a pan with coconut oil and set over medium heat.
- Do your pancake thing. Top with real maple syrup, walnuts, and whatever else your heart desires.

Sounds like a fabulous Sunday! Today was my last Sunday at home and my dad made waffles…mmm! Looks like we have the same schedule, but I’m going back Saturday morning. Enjoy the last few days!
