In my earlier pancake post, I mentioned that I celebrate life by nourishing my body with healthy, wholesome, delicious food every single day.

Point proven.

organic brown rice pasta tossed w. organic olive oil, steamed organic zucchini, sundried tomatoes, creamy chevre, lemon zest and fresh black pepper served atop organic baby spinach

Parmesan and pine nuts would be excellent additions if you aren’t an unemployed college student.

…and of course there was chocolate to cleanse the palate.

Eating healthy is not a chore, but a habit. I spent much of my weekend perusing the new bulk aisles at the local co-op and utilizing every square inch of my small kitchen to make a double batch of hummus, tofu & veggie stir-fry, GF vegan no-bake granola bars (recipe on the way!), peanut butter banana pancakes, and light lemony pasta.

I would say I deserve an A for effort in taking care of my body and fueling it with nutritious eats. If only I spent the same amount of time nuzzled in my textbooks that I do grocery shopping and elbow deep in oatmeal dishes.

Time to prepare for Monday #13…

    Oh my goodness, this pasta looks amazing!!! It’s making me so hungry! I’ve never tried brown rice pasta, but it looks good.

    I’ve had quinoa pasta…it’s pretty good! I thought it tasted a lot like regular pasta. I’ve never had brown rice pasta…but that sounds pretty tasty!

    It sure can be a challenge for a college student to stay healthy. You seem to be on top of things, which is amazing!!
    I’m a college student myself and I have quite a journey left ahead of me.
    Do you have any tips for college students staying healthy?
    Oh, and what do you do for an all-nighter (staying up all night); what’s your source of caffeine?

    that pasta dish looks awesome! I had sundried tomatoes for the first time in a long time the other day and definitely want to start incorporating them back into dishes!

    As an employed yet still poor graduate, I have to say that this pasta recipe is perfection. I may very well have to make this in my first week at my apartment. Thanks for inspiration :)

    that pasta looks amazing. now I’m going to go dig around in my kitchen and try to recreate it for lunch. plus, that’s my very favorite kind of chocolate :)

      The hazelnut toffee flavor was a new one to me, and I’m not a huge fan, but I can assure you it’ll be gone before bedtime ;)

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
