My crepe lunch kept me full all.day.long, so when dinner hour rolled around, I wasn’t in the mood for much more than a summer salad. We threw everything but the kitchen sink into our bowls. Say hey to Nutrition!
greens from the garden, organic peppers, avocado, fresh English shelling peas, sweet corn, grated beet, red onion, wheatberries, raw sunflower seeds, and a chive flower for garnish… dressed lightly with vinaigrette.

I’m exhausted and have a FULL day tomorrow, including an 8-mile run and 8-hour catering job, so bed is where I’m headed a.s.a.p.
First, a couple Friday features:
(1) I restocked my organic quinoa supply with two 4lb. bags of from Costco – under $10 each!
(2) My Almond Butter Dark Chocolate Crispy Rice Treats are featured on the Earth Balance Made Just Right site – cool deal!
Goodnight, foodie friends! :)

Just found your blog and already obsessed. You’re such an inspiration. I just wish I could find some of these foods here in Ukraine! Took some time off of running after my first race (a marathon relay), but now that I’ve read some of your posts, I think it’s time to get back on the roads. Thanks!
I love kitchen sink salads too! Not only are they extremely healthy and yummy, but they are also a great way to use up everything leftover in the fridge. I hate wasting food, so leftovers show up a lot in my kichen sink salads.
Have a great weekend!
Your photography is beautiful! Do you use a lightbox?
Thank you, and no I don’t have a lightbox. I try to use natural light whenever possible.
The kitchen sink never tasted so good! That salad looks amazing!
I love colorful salads! The more colors the better! Especially when you add pretty edible flowers. Thanks for sharing the crispy rice treat recipe! Always looking for recipes that don’t use any white sugar!
A catering job? Your recipe is posted on Earth Balance? This is exciting! Congratulations!
Great looking salad and AMAZING pictures! I want a salad now!
I just stumbled across your blog and am totally loving it! You are pursuing my dream career – I really want to study nutrition/communications, but can’t right now :( ON another note, your salad looks like what I had for lunch!
Looks like a great salad, lots of fresh veggies! Perfect summer dinner! :)
