Apricot Cherry Upside-down Cake

I made the dinner as a Father’s Day “gift” to my dad, but my mom took care of my birthday dessert (thank you thank you!!). Each fresh apricot is stuffed with homemade almond paste – oh, how I wish I was as talented of a baker as my mother. It was a toss-up between this recipe and cheesecake. I think I made the right choice.

I would have to agree. You can get cheesecake pretty much anytime, but apricots stuffed with almond butter? I’ve never even heard of that, but it sounds divine.
