I like to make granola.
It’s healthy, adaptable to the ingredients in my pantry, easy to make, and better than almost any granola you will find on the grocery store shelf.
The dreary winter weather has got me in the mood to bake, but since I am still recovering from my holiday hangover, only nutritious ingredients were allowed in the kitchen. I added molasses to the recipe, as it’s an excellent source of iron {I’m often iron-deficient as a vegetarian}.
Maple Molasses Granola

6 c. rolled oats

1 c. unsweetened coconut

1 c. raw almonds, chopped

1/4 c. ground flax

1/2 T cinnamon

1/2 T sea salt

1/3 c. pure maple syrup

1/3 c. molasses

1/3 c. canola oil
In a large mixing bowl, combine oats, coconut, almonds, flax, cinnamon + salt. In a small bowl, combine the wet ingredients – oil, molasses + maple. Warm in the microwave (~30 seconds) or on the stove over low heat. Pour wet ingredients over oat mixture – mix thoroughly. Bake @ 350F for approximately 30 minutes, stirring every 10, until crunchy. Remove from the oven and allow to cool completely on paper towels to crunch up before storing in an airtight container.
Note: I would substitute brown rice syrup for the maple next time around for crunchy, cluster-rich granola.

granola and muffins are my two favorite things to bake! that is a good idea to add molasses for iron… i’m often deficient as well.
