winter break favorites.

I realized the other day that this quite possibly could be my last school break ever. After May 20th, Winter Break, Spring Break, and Summer will not exist in my life. The real world will run on non-stop… or so I here.

With this realization, I’m soaking up my final days of my lonnggg break; in other words, double WREC days, chick flicks in bed, deep cleaning/reorganizing, pampering my training toes with a pedicure, etc.

Here are a few favorites from the past five weeks, in no particular order.

country music.

…specifically Sugarland, Lady Antebellum + Rascal Flatts.

the daily sprinkle.

Every morning I read The Daily Sprinkle via the sparkling and spunky, Syracuse-lovin’ Miss Katelyn. It’s like Positive Monday every day.

iced coffeeee.

Every morning, my dad would make an extra cup of fresh, drip coffee for me and stick in the fridge to chill so I could have iced coffee with my oats – thanks, Dad! #spoiled

the ocean.

If the Pacific Coast isn’t a place of peace, I don’t know where is.

 

training like a fool.

reading this book.

    I can relate to this on so many levels. I adore the Pacific – it truly is the place to be. And your waffles look scrumptious! Which recipe do you use?

      For those waffles, I used a store-bought gluten-free mix. Shhh, it’s our little secret ;) For the pancakes, I used oat flour in my favorite Puffy PB Banana Pancake recipe.

    Isn’t it scary to think this is the last ‘break’? I know summer will still be enjoyable since I’ll be lifeguarding at my old pool one last semester, but then I have NO idea what I’ll be doing. I want to press pause!

    Just doing a little random link surfing and found your blog! I am a postgraduate Nutrition and Psychology student, on my summer break, so we have something in common ;) I am luxuriating in having a clean house. Really hoping to keep it at least a little de-cluttered once the craziness of study starts again. I love your pink laces. Doesn’t pink workout gear just make you work harder? I think so… xx

    While it does take some time to get used to the real world that doesn’t include month long vacations, I promise you will adjust and you will enjoy the freedom you work into your own schedule. I agree, some of my favorite things are as simple as getting new underwear ;) And I do love new exercise gear, it motivates me to work out.

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
