Well, hey there!

Hope ya’ll have had a good week. It’s hard to believe my last Spring Break is coming to a close, and in 8 short weeks I’ll be dressed in a cap and gown! My class schedule has got me workin’ hard ‘til the end, but I’m trying my best to enjoy my final days as a college kid… including happy hour dates and late-night baking: cast iron skillet cake — yum!

Believe it or not, I actually caught my dinner on camera tonight! Remember the healthiest dinner I’ve ever made? Well, tonight’s “recipe” is another one of my go-to meals when I’m craving vegetables. Yes… I crave vegetables.

Balsamic Lentils with Maple Cinnamon Roasted Vegetables

In a baking dish, roast ~8 halved brussel sprouts, 2 small pealed + cubed sweet potatoes, and 1 thick slice of onion roughly chopped — drizzled with olive oil, pure maple syrup, sea salt + cinnamon — @ 400F for 25-30 minutes.

In a microwave-safe dish, heat ~1/2 c. Trader Joe’s cooked lentils drizzled with balsamic vinegar. Top with roasted veggies, creamy chevre and crunchy pepitas.

Serves 1.

Besides brussels, I also crave cookies and am notorious for digging into a bag of frozen cherry pistachio chocolate chip cookies after feeding my body a fiber-rich, plant protein-rich {vegetarian & gluten-free} meal.

    Totally understand your vegetable craving Hillary. And this recipe looks so cozy and good. Glad you’re staying balanced :) Power through (but savor!) these last 8 weeks!

    i often crave veggies too, especially after a visit home where i tend to indulge. you are so right though – life is all about balance!

    Oh man, this looks GOOD! And I love all of the ingredients! With the unseasonably warm winter. I haven’t used the oven as much as I like to but found I can “roast” on my BBQ grill pretty successfully. Soooooo, I am going to have this tomorrow!!

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
