in between the madness.

April 5, 2012 by Hillary 10 Comments

LIFE:

It’s busy, stressful, and wonderful simultaneously.

I have 6 weeks left to go of my college career… SIX weeks!

Less than 30 school days remain in my {immediate} future.

In between the madness of class, studying, and mentoring my clients, I’ve searched, interviewed, and secured a “big girl” J-O-B! More on that later. #teaser

In between the madness, I’ve made time for hikes and nourishing my mind & body with delicious, wholesome foods.

Last night, I made wild {balsamic-glazed} salmon with sautéed rainbow chard, sweet onion, raisins and sunflower seeds. Yes, this would be the dish I had to pinch my nose to eat as as a child. Perhaps, subconsciously, I made this nostalgic recipe in honor of my mom’s birthday {Happy Birthday, Mom!}… or maybe because Mom is always right — even when we’re talking about leafy greens and raisins ;)

In between the madness, I squeeze in baking dates with my kitchen whenever possible — more or less once a week.

To Note: the non-descript, moist, light, nutty baked good above is the best thing to come out of my oven all year. I whipped up my own version of a quick Carrots ‘N’ Cake treat: Pumpkin Nut Date Bars. #OMG

Pumpkin Nut Date Bars

— the Nutrition Nut version

  • 1/4 c. canned pumpkin
  • 1/2 c. whole wheat flour
  • 1/4 c. brown sugar
  • 2T maple syrup
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 c. canola oil
  • 1 egg
  • 4-6 Medjool dates, chopped
  • 1/3 c. walnuts, chopped

Spray an 8-inch square baking pan with canola oil.

In a large mixing bowl, combine all ingredients until smooth.

Spread batter in prepared baking pan, and bake @ 350F for ~20 minutes.

Let bars cool completely in pan before cutting.

Makes 9 bars.

In between the madness, I cleanse the body {of pumpkin nut date bars} and clear the mind by sweating at the WREC.

Thursday’s workout:

In between the madness, I blog {though seldom} because my life would not be the same without it – it being the virtual world where I find the daily inspiration to be me.

& when there is time, in between the madness, I sleep.

Goodnight.

Glad you’re surviving the madness of senior year! I’m experiencing some madness myself, but thankfully there are only 9 more weeks ’til summer… Keep chugging along!

Congrats on the J-O-B! Wow, huge relief to have that secured before graduation and entering the “real world”. ;) Can’t wait to hear what you’ll be up to – the health world will gain a huge asset once you have that diploma!

- moved clear across the country to a new state for the second time
- hopped from one AirBNB to the next for 6 weeks while looking for a house to call home
- made new friends, virtually & IRL
- binge watched more TV shows than I can recall
- leveled up as an entrepreneur: hitting milestones with my virtual assistant and @beautycounter businesses
- voted for a new president
- ascended new trails and explored alpine lakes of the Pacific Northwest
- adapted: to Zoom holidays, takeout, and masked faces becoming the (temporary) norm

This challenging year was all about appreciating the little things while living through some really BIG things. 2020 had more than a few lessons to teach us all. Through a pandemic, pivotal change in presidency, and loud cry for human rights, I see very clearly how privileged I am. It was the year to let go of plans and lean in to a new perspective.

After all, hindsight is ②⓪②⓪.

Best thing about 2020... for me, it’s been relationships - virtual and IRL.⁣⁣
⁣⁣
One of the goals that I set for 2020 was to make one new local friend in Seattle (seriously something I wrote down as I began the new year moving across the country). While I’m happy to say that I did so (during a pandemic), I feel fortunate for the virtual friendships that developed, too.⁣⁣

I’ve gotta take a second to give a shoutout to my newest soul sista @weeksofwonder. You helped me get after it during my second year of entrepreneurship with a hefty dose of #2020 mayhem. 🙏🏼⁣⁣

Wendy and I met here on IG, and what started as a business relationship and accountability partner has turned into a special bond that transcends any walkie-talkie or social media app. This creative spirit has not only inspired me to get after it and dream bigger as an entrepreneur, but in the same way has encouraged me to honor rest and play: whether it’s giving each other kudos on Strava for tackling a run, building badass business plans and packages, or simply holding space to share the wins and the many woes, personally and professionally, of a memorable year. Having Wendy in my corner has led to some serious momentum and a sense of consistent community.⁣⁣
