When I think of Fall, my childhood, and my mother, I think of two things. The first are moist pumpkin muffins that were made by the quadruple dozen and brought to elementary school functions, soccer games, and swim meets. Sometimes they had toasted walnuts, but my brother and I got the most excited when my mom added chocolate chips to the batter. Who would have guessed!?
And her molasses cookies… they are the second nostalgic baked good I think of when the leaves turn to crimson. I remember my mom telling me that the cookies were healthy because molasses is a good source of iron. She’s one smart cookie! ;)
This weekend, in the autumn spirit (and perhaps slightly homesick), I made Pumpkin Molasses Cookies (inspired by this recipe). Then, I wrapped them in clear cellophane bags tied with ribbon and festive Fall stickers to be hand-delivered to friends… just as my mother would do.

Ahhh YUM! Molasses cookies scream holiday to me because they were my dad’s favorite and we always had them in the house :) I love the addition of pumpkin!!!
