Tuesday Tidbits | 6.11.13

June 11, 2013 by Hillary 12 Comments

1. How can it be June 11th!? As in, we’re almost halfway through the year? I guess I should check in with those 2013 aspirations soon…

2. I have a bottle of Bacardi in my freezer. Why? Well, raspberry mojitos were totally necessary last Saturday. $12 rum for mojitos all summer — deal.

3. In eight days, I’ll be eight times three — jolly gee! It doesn’t seem long ago that I turned 21 and ordered my first raspberry mojito… the rest was history (see #2).

4. Caprese pasta sounded like a great idea, until I confirmed – yet again – that fresh mozzarella just ain’t my thing.

5. I’m gym-less — gasp! No CrossFit box, no running… this looks scarier than it actually is, I promise. Injuries have the right of way.

6. I have a bag of stollen apricots in my freezer and one dozen more ripening on my counter. Sorry, I’m not sorry — an abandoned apricot tree can’t get past me and my boss. #eatlocal

7. I totally skipped May’s Tuesday Tidbits. Oh bother.

8. I kinda sorta maybe have a musical crush on Eli Young Band.

9. Breakfasts this week include Zucchini Almond Meal Muffins… and, by the way, I will never “be Paleo.”

10. I’d say the boyfriend is pretty spoiled: Summery Salmon with Apricot Peach Salsa & Honey Basil Walnut-Crusted Salmon.

It’s a busy week for me… hope to “see you” soon :)

I think one of my favorite things about being in a relationship is cooking! It is too fun experimenting on someone who will eat anything!

I’m a big fan of mojitos as well! But, I just tried a pineapple guava mimosa last weekend at brunch and it was kind of amazing.

For Memorial Day, I made Jenna’s (Eat Live Run) Apricot Whole Wheat Crostata. Turned out great!

I haven’t been going on much (read: once) since my 21st birthday so besides straight up shots, I haven’t tried too many drinks; however, I absolutely adore Mojitos so Strawberry Mojitos are probably ten times as good!

We just got the first apricots of the season and I am so EXCITED. Summer fruits are the best!

I would say that your boyfriend is pretty spoiled too!! That food looks so tasty :) So funny that you mentioned apricots because at the store on Monday, they were sooo fragrant! I need to purchase some and get to experimenting. I opted to buy the dried apricots to make some energy bars…yum!!! Yay for summer :)

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste.

We went to all of these 3 places more than once during our quick stay - highly recommend!

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view!

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza!

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
I’m sure Koba is wondering why we ever lived in I’m sure Koba is wondering why we ever lived in Florida for two years.
