At the beginning of the year, I was on a roll with weekly meal plans. I was completely inspired and enjoyed posting the recipes I had on deck for the week. I’m not sure what happened, but I haven’t shared my weekly eats with you all since March 17th!

Great idea with the zucchini and pesto! I have both of those at home and, until now, was uncertain what to have for dinner tonight!
Zucchini “Pasta” sounds awesome! I’m making a veggie bake and chicken quinoa bake that will last all week. I love meal prepping on Sundays that way I don’t have to worry about it during the week. It also helps me make smarter choices during the week.
So great that you’ve got back to meal planning! I find that it really helps. I just made zucchini pasta with spinach pesto… next time definitely taking your lead and using kale! Hope you have a wonderful week.
