Sunday waffles, Kodiak Cakes style + local peaches, hemp hearts | zucchini “pasta” + kale pesto, roasted cherry tomatoes | “power salad” {sweet potatoes, beets, broccoli, goat cheese, almonds, blueberries} | coconut peach kale smoothie | fresh watermelon mint feta salad {minus the balsamic} | tofu + veggie stir-fry over brown rice, homemade peanut sauce | toasted sesame ginger salmon + coconut lime rice, sautéed Chinese long beans | chopped kale salad.
Meal planning played out quite well last week; however, this week, the grocery shopping has been delayed and the recipe ideas haven’t even made it to the runway.

So… I wasn’t hungry until I saw this. Cue tummy grumbling.
Wow! Those all look amazing! Currently I’m getting ready to move, so it’s all about using up what I’ve got left! Eggs, oatmeal, a couple apples… time to get creative :)
