You guys…! I haven’t posted a recipe on Nutrition Nut in FOR-ever! I’m sure you’re just as aware of that as I am. In fact, the last recipe I shared – ironically – were those sweet summer Peach Coconut Almond Meal Muffins.
I like to keep a batch of muffins in my freezer for weekday breakfasts; since I was all I out, I whipped up a batch of autumn appropriate almond meal muffins between tackling the post-vacation laundry monster. Ever since discovering how easy it is to bake with almond meal – muffins in particular – I can’t go back to using whole wheat flour.
My recipe creation skills are a bit rusty, and my patience for food photography is meek, but I hope you enjoy the recipe nevertheless. It’s a healthy one folks. I haven’t succumbed to the sugar-laden holiday treat extravaganza quite yet.
Recipe Notes >> I used a skimpy two tablespoons of pure maple syrup. You could certainly add another tablespoon or two, and I presume honey would be a tasty substitute. Also, I’ve been boycotting canola/vegetable oil as much as possible in my baking and cooking, but you can use the oil of your choice (coconut oil would be a great option here).

I’ve been so obsessed w/ muffins lately. They work so well freezing them and then taking them out the morning of. I’ll have to give this recipe a try!
This weekend I’m going to SF for din with my friend who is in town from Germany. She’s a flight attendant so it’s a quick visit. Then I’m off Saturday morning for a weekend girls getaway with my mom, cousin, and aunt to Monterey. Should be a fun one! Hope your mother daughter weekend is awesome.
