12 Pumpkin Breakfast Recipes

October 21, 2014 by Hillary 6 Comments

When pumpkin recipes start appearing on Pinterest in early August, in all honestly, I scrunch my nose. Yet, as soon as the calendar turns to Fall (despite the reality of the outdoor climate), I welcome all willing to to raid the aisle of canned pumpkin in the grocery store.

Then, as soon as the weather decides to act accordingly to its season – with cooler, crisp morning air and cozy, cloudy skies – the baking bug inside me is ignited.

And because breakfast is the first thing on my mind, every.single.day, I deemed it necessary to collect a dozen pumpkin recipes using Foodie for my favorite meal of the day.

I have a petite collection of pumpkin recipes in my own blog archives, but these new-found recipes on the web blow mine out of the water.

I could totally pair together one of Elle’s Pumpkin Pie Bran Muffins with Pumpkin Spice Latte Syrup-spiked iced coffee five days out of the week; and I bet I could convince nearly anyone to have breakfast with me over Pumpkin Pecan Scones and vegan Pumpkin Chai Lattes.

I encourage you to start a fall recipe collection on Foodie.com… and if you’re as into breakfast (and orange squash) as I am, then you are invited over for a pumpkin party… at 8:00am. The (iced) coffee’s on brewing!

What’s your favorite way to enjoy pumpkin?

Yum… I’ll be adding a few of these to my list :) My favorite is in any baked form. Love me a muffin or slice of pumpkin bread!

Recently my favorite way has been in cornbread! It seriously takes it to the next level. I’ve already made this like 10 times this season. Muffins and granola bars are the recipes I want to try next. They look so good. So many different variations out there. How did your granola turn out the other day?

The granola is tasty, but a bit less crispy/crunchy than I prefer (due to moist pumpkin puree).

Oh, scones are amazing! I haven’t had one in ages… my favorite pumpkin dish right now is ravioli! Such a great texture inside those pasta pockets. :)

This challenging year was all about appreciating the little things while living through some really BIG things. 2020 had more than a few lessons to teach us all. Through a pandemic, pivotal change in presidency, and loud cry for human rights, I see very clearly how privileged I am. It was the year to let go of plans and lean in to a new perspective.

After all, hindsight is ②⓪②⓪.

Best thing about 2020... for me, it’s been relationships - virtual and IRL.⁣⁣
⁣⁣
One of the goals that I set for 2020 was to make one new local friend in Seattle (seriously something I wrote down as I began the new year moving across the country). While I’m happy to say that I did so (during a pandemic), I feel fortunate for the virtual friendships that developed, too.⁣⁣
⁣⁣
I’ve gotta take a second to give a shoutout to my newest soul sista @weeksofwonder. You helped me get after it during my second year of entrepreneurship with a hefty dose of #2020 mayhem. 🙏🏼⁣⁣

Wendy and I met here on IG, and what started as a business relationship and accountability partner has turned into a special bond that transcends any walkie-talkie or social media app. This creative spirit has not only inspired me to get after it and dream bigger as an entrepreneur, but in the same way has encouraged me to honor rest and play: whether it’s giving each other kudos on Strava for tackling a run, building badass business plans and packages, or simply holding space to share the wins and the many woes, personally and professionally, of a memorable year. Having Wendy in my corner has led to some serious momentum and a sense of consistent community.⁣⁣
