Simple California Summer Salad

The strawberries at the farmer’s market — be still my heart. Not only do they glisten in the sun, ripening by the minute against their iconic faded teal plastic cartons, but they taste of sweet sweet summertime.

My go-to salad in the summer: sliced strawberries, ripe avocado, roasted nuts, and huge handfuls of freshly-picked local greens. P says I like this salad because of its colors, and therefore it is pretty to photograph. True that! He knows me so well. Plus, this light side is versatile when it comes to summer adventuring – from potlucks to park picnics – and it accompanies any pizza perfectly.

This simple California-esque salad is simple enough to pack up in a tupperware for any outdoor summer adventuring. Simply add two to three large handful of freshly-washed greens of your choice (spinach, arugula, butter lettuce, kale) to the tupperware; add sliced strawberries (3-4 per serving), 1/2 avocado sliced, and chopped Lightly Salted Blue Diamond Almonds. Right before serving, dress lightly with fresh squeezed lemon, olive oil, and honey.

The lightly salted roasted almonds add so much flavor to this salad — not to mention protein, healthy fats, and vitamins and minerals, too.
