In a Nutshell // January 2016

January 2016 was a full month: challenging, adventurous, rainy, long, busy, chocolaty, educational, exhausting.

Jan. 1 // welcomed a new roommate into my apartment

Jan. 2 // dropped P off at the airport to head back to basic training after two blissful weeks of holiday-ing

Jan. 3 // packaged up a box of Dark Chocolate Almond Bark with Coconut & Ginger

Jan. 8-11 // disconnected in the peaceful Trinity Alps with family for a long weekend — cross-country skiing, puzzling, reading…

Jan. 17-23 // traveled to the East Coast: to North Carolina and then to Florida for a worksite wellness conference via 7 airports, oy vey!

Jan. 19 // shared a powerhouse of a recipe: Chocolate Almond Butter Cup Smoothie

Jan. 31 // enjoyed a 15-minute call with P after 29 days of only snail mail communication!

I also completed 4 weeks of Lauren’s Fit and Lean 2016 Challenge (lovin’ it!), ate lots of avocado toast, got sucked into another season of The Bachelor, became addicted to Snapchat (follow @hillontherun)… and did not execute my 2016 goals so well. January is just the warm up to the year, isn’t it?

February is seeming to appear just as full. I’m ready for it!

    A very full, and fulfilling month :) So glad it ended with a call from P :) And glad, too, that I got to spend some of the month with you :) Here’s to a new month! (loved getting to turn the page on my new, homemade, European adventure calendar this morning!) oxoxo

    Sounds like you had quite the month! Ugh, snail mail only communication… I remember those from my hubby’s military training days!

    I was just saying last night that I’m excited for the fresh start of a new month. I started off the year sick for most of January – which is such a rarity for me – so I’m ready for a healthy, happy month!

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
