I can’t believe this is the first blog post I’ve written in 2017 — 30 days into the new year. Well, actually, I can. My blogging game has been anything but strong, but I finally got the itch to show up here. Like anything that you don’t do in a while, I feel entirely rusty with blogging. The less you do something, the more out of practice you get, and the more challenging it becomes to begin again.
I honestly don’t know where to begin. A word vomit of the random thoughts on my mind seems easiest. It’s a start.
I broke in my new USA Pan with a batch of Sarah’s Flourless Peanut Butter Banana Muffins (with dark chocolate chips of course). Sarah has this pan, too. Basically I’m just trying to bake as Sarah does. Her flourless (ground oats for the win!) muffin recipes are a staple in my kitchen. I make a batch almost every week or two. They are so easy to whip up in a food processor and store great in the freezer for easy weekday breakfasts.
Speaking of “flourless” recipes, Kate’s recipe for Easy Gluten-Free Waffles is spot on. A weekend must! But, double the recipe because you’ll want extra. I promise.
I do not understand iCloud. I recently connected my iPhone to the cloud for backup purposes, but now I feel like stuff (as in photos) is transferring back to my phone and it is annoying the beejeepers out of me! Tell me: how do I back up my phone to iCloud without photos coming back onto my phone!? It’s driving me nuts!
I am going to turn into one big Buddha Bowl (search “Buddha Bowl” on Pinterest and you’ll get hungry). I’ve been meal prepping these on the weekend and then eating them for lunch or dinner: quinoa + roasted winter squash or sweet potatoes + sautéed kale + avocado + seeds + tahini turmeric dressing. Nourishing and satisfying.
I made a matcha latte every day this week. In case I start turning murky green, you now know why. The best discovery was using my new immersion blender to mix all of the ingredients since I don’t have a fancy bamboo matcha whisk. My recipe this week: [cold] unsweetened vanilla almond milk + organic matcha + a tiny bit of maple syrup + collagen powder (sneaking this into beverages lately).

Sipping on: Traditional Medicinals Throat Coat® Lemon Echinacea tea (I’d drink this even if I wasn’t nursing a lingering cold.)
Listening to: Ben Howard
Snacking on: macadamia nuts and berries
Shopping for: bedroom decor (finally took the plunge to give my room a facelift!)

I’m so glad you got the USA Pan! It’s my favorite. I have a cookie sheet from them too. :)
I wish I could offer you advice on your iCloud issue but I’ve never backed mine up so…hopefully it magically fixes itself!
Oh I want to see your room facelift! I’m so into home decorating right now haha. And I also don’t understand iCloud hahah I just back it up to a hard drive manually whoops!
Hey lady, hope that you’ve been doing well! I love making healthy muffins to have around for the week too, and have made many of Sarah’s recipes – including her muffins. I’ve been also about green tea lately to make sure I get those antioxidants in to fight any germs.
Oh and PS, my iCloud has been full of storage for months now and I still haven’t gotten around to either figuring out to how to delete stuff or up my storage. Oops!

I’m having the same issue, though not the Apple version, and just don’t want to ‘buy’ storage, if that’s what ‘they’re’ after.

Haven’t exactly figured out the cloud thing… sort of using both iCloud & Google Photos.
I think this “new chapter” in my life will bring me back to blogging in the near future… xo
