Santa brought me the cutest bag of maca powder in my stocking this past Christmas. I’ve added it to Creamy Cashewmilk Steel Cut Oatmeal, but not much else. I have to try this Coconut Cashew Maca Granola. Have to.
I have not made “energy bites” (a.k.a. lazy girl Larabars) in some time, and, well, the Medjool dates at my local farmer’s market glisten at me every Saturday as I stroll the aisles. They are asking for me to mix ’em with nuts and other hippie ingredients, I just know it… or slather with creamy almond butter from a fellow farmer in the neighboring booth a few steps away.
This recipe is incredibly simple: 4 ingredients + 1 food processor. No cooking required. This recipe is raw and vegan and gluten-free, and probably resembles bird food to some.
What is the deal with maca powder? It is a superfood, don’t ya know. Dried maca powder contains more than 10 percent plant-based protein (nearly 20 amino acids), and is a good source of fiber, vitamins, and minerals.
The maca root was prized throughout the Incan empire for its adaptogenic-like qualities that enable it to nourish and balance the body’s delicate endocrine system, and to help cope with stress. It also energizes naturally, without the jitters and crashes of caffeine, and it can aid in reproductive function, helping to balance hormones and increase fertility. (source)
- 1 cup Medjool dates, pitted
- 1 cup raw cashews
- 1 Tbsp. maca powder
- hemp seeds for rolling, approx. ⅓ cup
- Blend dates, cashews, and maca powder in food processor until combined (and cashews are ground into tiny pieces).
- Roll sticky date "dough" by the tablespoon into round balls.
- Roll balls in hemp seeds.
- Store in the refrigerator.
