FALLin' in Love

Good morning! I got to set my alarm a little later this morning since three of my four classes are furloughed today – it’s ridiculous. Last night when I was thinking about breakfast, naturally, I couldn’t decide what to have. I slept on it, and this morning the decision was easy…pumpkin oatmeal. I can’t get enough of Fall : ) I love everything about it: the crisp, cool nights, the crimson leaves, and an excuse to put pumpkin in everything.

  • 1 cup water
  • 2/3 cup oats
  • 1/4 cup pumpkin
  • 1/4 cup soy milk
  • 1/2 banana
  • 1 T walnuts
  • 1/2 T brown sugar
  • sprinkle of cinnamon

Hi Thai

Dang. The days are just flying by lately. I almost feel like there is hardly enough light in the day to get everything done. As my mom pointed out to me, the hour of light didn’t disappear, it just got stuck on the “other end”. I guess I should get up earlier, huh? Now that it gets dark at 5:00 p.m., I have been getting hungry for dinner much earlier.

Tonight’s eats = Trader Joe’s Thai Vegetable Gyoza + brown rice + snow peas…easy and delicious!

Little To Say

After receiving the sad news this morning, I needed to get out of the house and clear my head. I went to The Resort (a.k.a. my school’s new gym) and had a short & sweet workout:

  • 10 minutes: run around indoor track
  • 20 minutes: stationary bike
  • 15 minutes: treadmill
  • 15 minutes: upper & lower body conditioning

I made a quick stop at Target – it always cheers me up – before coming home for lunch:

0181/2 sandwich w/ hummus, Havarti, cucumber & lettuce + 1 Fuyu persimmon

Going to go tackle my to-do list…

Muffin Mourning

Hello. I slept in a bit longer this morning because it’s a holiday, so I was especially ready for breakfast this a.m. I am hungry in the morning 98% of the time : ) This last weekend I made a batch of muffins from a beautiful recipe book I received last Christmas from my brother. I like to bake muffins and store them in the freezer for “on the run” breakfasts. I just pop 1 or 2 in the microwave, and can enjoy a warm, homemade muffin in seconds. The original recipe is Honey Oat Apple, but I made a couple changes by using agave nectar instead of honey, and adding chopped walnuts for some extra crunch. I also had a steaming cup of (decaffeinated) green tea – a new addiction.

Simple Salad & SYTYCD

Wow… wow an exciting day! I am pretty sure I have been walking around with a grin from ear to ear. Thank you all for your positive comments and help getting the word out. I am astonished by the number of views already. I still have quite a bit of fine tuning I’d like to make to the blog, and hope those of you with blogging/web experience can offer your help along the way. I didn’t have my normal appetite today, as I was giddy with excitement, but after class I put together a simple salad for dinner:

  • mixed baby lettuces
  • tomato
  • avocado
  • cucumber
  • red onion
  • goat cheese crumbles
  • olive oil  & balsamic vinegar + fresh ground pepper

I’ve got to get some studying accomplished before 8:00 p.m. Tuesdays = So You Think You Can Dance!

Debut Day!

Hooray! Today is the day. Here’s the story…

I was woken up this morning by the annoying beep of my cell phone informing me I had a new text message. It was from my mom: “Read Jenna’s blog!” (7:09 a.m.). So, I crawled out of bed and flipped open my laptop as quickly as possible. Within seconds I was reading the exciting news @ Eat Live Run. Jenna’s blog was one of the first food/health blogs I had discovered, leading the way to my current blogging obsession. Ever since that enlightening day in June, I have followed Jenna through her adventurous life, admiring every step of the way. Her big news today was not only motivational, but a sign that there was no reason to wait any longer (to start my own blog, that is). Jenna only has a few years on me, yet her list of accomplishments is astonishing. Her post today was the ulimate kick-in-the-butt, saying, “What are you waiting for, Hillary?” : )

I am so excited to have (finally) started this new dimension of my life. I can’t promise my life is as exciting as Jenna’s – spontaneously moving across the country, working at a beautiful Sonoma County winery, dining with Top Chefs, and attending fabulous food blogging conferences (yes, there is such a thing!) – but I hope you will find a bit of inspiration from my life’s journeys, as I live (eat) each day to its fullest!

Speaking of eating, the second thing I could hardly wait to do this morning was stir up a pot of my favorite breakfast…OATMEAL! Today’s version was perfectly simple and satisfying:

  • 1 cup water
  • 2/3 cup old fashioned oats
  • 1/2 banana
  • walnuts
  • cinnamon
  • splash of soy milk

Well, I have a full Tuesday of classes ahead + my bi-monthly Nutrition & Food Science Association meeting this evening.

It’s no secret that I suffer from chronic anxiety and panic attacks. Or at least I don’t intend it to be. Because while there can be a lot of shame and embarrassment around both of these, I know I’m not alone in my experiences. While I’ve leaned toward the more anxious side most of life, my bothersome anxiety has steadily increased since my mid-twenties - some periods being worse than others. 

It’s not a complete surprise that my mental health has taken a dip during my first full gloomy Seattle winter — in the height of a pandemic. 

Here are some ways I have been nurturing my body & mind as I work with a team of practitioners to work on understanding the **root causes** of my panic, and to live with more ease. 

» no coffee (not even decaf)

» meditating regularly - I’m using @insighttimer 

» gentle movement

» weekly therapy sessions

» attempting cold showers (this is hard for me!): if you’re interested, you can research how this impacts the nervous system

» working with a naturopathic doctor to focus on gut + hormone health

» trying a new Rx - a decision that took years of consideration

» lastly, opening myself up to vulnerable conversations/sharing my story and my experiences in efforts to reduce any shame and connect with others

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
