Pick-Me-Up {Power} Bars

I have another recipe for you today, and again, it requires minimal cooking. I don’t know about you, but the last thing I want to do is crank up the oven on these HOT summer days.

As a working gal, I often get a rumble in my tummy between breakfast and lunch. Rather than relying on my favorite (expensive) bars, I figured I’d give my hand at making homemade “power” bars.

My creation was adapted from this recipe. I put a Nutrition Nut spin on it, including substituting the flax seeds with hemp seeds* (I sprinkled them on top of the bars, too).

*Swanson Health Products sent me a few products to sample of my choice, and I’m telling ya, I just can’t get enough healthy hemp in my life – love the nuttiness!

Perfect pick-me-up material for a mid-morning or mid-afternoon snack. Loaded with healthy nuts and seeds, these gluten-free & vegan bars are also excellent exercise fuel.

Edamame Avo & Corn {Summer} Salad

Good morning, happy Friday!

Hope ya’ll have had a good week. Has anyone tried the 20-minute Tabata Jump Rope Workout!? I did it on Workout Wednesday — hurts so good!

About this recipe… it’s almost a no-cook, cool, refreshing summer salad, of sorts, that you can make in your bikini after reading poolside. #lifeistough

I came up with this recipe as I was strolling the grocery stores aisles, making my weekly tour around Trader Joe’s (a.k.a. momentarily escaping the 105F degree sauna outside the store’s sliding doors).

I’m having a fling with fresh, raw corn this summer, so that, along with the bag of edamame I’ve been abandoning in my freezer, is where this recipe got its beginning.

Add avocado (because you usually always should), half of a jalapeño leftover from making mango salsa, and the juice from one large lime for that summer citrus pucker.

Edamame Avocado & Corn Summer Salad

  • 12 oz. shelled, frozen edamame
  • 2 ears fresh, raw corn – cut from cob
  • 1 large avocado – cut into 1/2 in. pieces
  • 1/2 jalapeño – finely minced
  • 1 large lime – juiced
  • 1 1/2t olive oil
  • 1/2t sea salt
  • fresh black pepper

Prepare edamame according to package directions (cook in boiling water for approximately 5 minutes). Drain and rinse under cold water.

In a large bowl, combine edamame, corn, avocado and jalapeno.

Drizzle with 1 1/2 teaspoons olive oil, the juice of one large lime, sea salt and freshly ground black pepper.

Let chill for 1-2 hours in the refrigerator before serving.

Possible additions: chopped garlic, fresh cilantro, cherry tomatoes…

 

I served it up over cooled quinoa for a light dinner after a 2,000 yd. evening pool workout.

Dessert: a few bursting handfuls of organic blueberries.

20-minute Tabata {Jump Rope} Workout

Hi friends,

I told you yesterday, I had a jump rope workout for you, so here it is. This workout is quick ‘n’ dirty, perfect for when you don’t have a lot of time to waste at the gym. Better yet, if you have a jump rope and kettlebell of your own, you can do this sweaty workout at home.

Note: If you don’t want to jump rope for 2 minutes straight, you could also do the jumping tabata style (jump for 20 seconds, rest for 10 seconds, repeat 4x).

Feel free to switch up the kettlebell exercises with any of your favorites, too :)

Favorite Things A to Z

Hi! Long time no “see.”

With my absenteeism from posting, there are so so many things I could be blogging about, but I couldn’t help myself from wanting to fill out this A-Z post I spotted on Carrots ‘N’ Cake yesterday. It’s sort of fun thinking about all of your favorite things in life. As you will see, mine are food and fitness focused– go figure!

A – Asics. I have a strong relationship with my running shoes.

B – Burpees. There’s no better full-body exercise, in my opinion. I love to hate ‘em.

C – Cookies. Almond Flour Chocolate Chippers, yes please!

 

D – Dark chocolate. DUH!

E – Emails from my grandma. They make me smile.

F – Farmer’s markets. My grocery of choice.

 

 

G – Granola. I heart creating new granola recipes. & of course I love me some Love Grown.

H – Half-marathons. It’s about time I sign myself up for #7.

I – Iced lattes.

 

J – Jumping rope. I’ve got a good workout to share with ya here soon.

K – Kettlebells. One of my favorite pieces of equipment in the gym. I’m addicted.

L – Laughing. It feels so good.

M – Mojitos {in mason jars}. Specifically strawberry basil mojitos.

N – Nike Frees. I recently got a new pair for my birthday – so light ‘n’ comfy.

O – Oatmeal in an almost empty PB jar. Always starts the day off right.

P – Pinterest. Inspiration station.

Q – Quinoa. I like to sneak it into muffins and pancakes.

R – Running. I don’t know where I’d be without it.

 

S – So You Think You Can Dance. Favorite summertime show.

 

T – Treadmill workouts. They make me faster!

U – My utterly amazing bridesmaid bouquet.

V – Vegetables. All colors, all day, every day.

W – Weddings. SO.MUCH.FUN!

X – X-training. It does a body good. Today I swam 2,000 yards at the WREC pool. #bliss

Y – Yoga. I was all about the yoga in 2011{read: my ode to yoga}, but I’m missing my mativation!

Z – Zucchini. Summer Bliss Bread anyone?

 

Hope you all had a great weekend. My weekend was active yet relaxing, healthy yet indulgent. The best possible kind :)

The Push-It Push-Up Workout

Hey Friends!

I hope ya all have had a good Monday. I owe ya’ll some photos a la my new camera, but I thought, tonight, I’d share with you my Monday Moves. I don’t know whether it was the photos of my birthday twin’s killer 8-pack or the ice cream indulgences this weekend, but I didn’t mess around at the WREC today.

Warm-Up

  • 4 x 20 sec. kettlebell swings @ 25lb.
  • 4 x 20 sec. squat w/ knee twist @ 25lb.

Track Set

  • 1/4 mi. run
  • 20 box jumps @ 24in.
  • 10 burpees

repeat 4x

Treadmill Set

2.33 mi. run // 20 minutes

  • 2 min. each @ 1.0 / 2.0 / 3.0 / 4.0 incline – 7.5mph
  • 4 min. @ 4.0 incline – 4.5mph walking break
  • 2 min. each @ 1.0 / 2.0 / 3.0 / 4.0 incline – 7.8mph

Cardio/Strength Set

  • 1 min. jump rope
  • 10 push-ups

repeat 4x

  • 10 front squats w/ 50lb. sandbag

My philosophy: sweat regularly, indulge often.

Tomorrow’s Runnin’ Tuesday, but my motivation to run these days is minimal. Let’s be DailyMile pals or fellow FITspiration friends!

Every 23rd birthday should involve strawberry basil mojitos.

Cheap rum, homegrown mint and stainless steel straws — a must.

What I’m Loving Lately {Summer Edition}

Hey hey.

Hope ya’ll enjoyed your weekend. Ready for Monday morning? Hard to believe I graduated college 3 weeks ago already. This {endless} summer is flying by! So before it’s already the 4th of July, I thought I’d share a few things I’m loving lately…

 

My stainless iced coffee tumbler. It was about time Starbucks.

I love a chocolate-y espresso roast. 14 oz. @ $7.99 isn’t too bad. Now if only it was organic and fair trade. You can’t win it all.

I haven’t seen a bowl of hot oats in ages. Toaster waffles are my typical breakfast these days, accompanied by at least 2 servings of iced coffee. & since I crave peanut butter and banana nearly every morning, I almost always fix ‘em up just so.

I can’t get enough country music these days. I’d be lying if I said I didn’t have any country radio stations programmed in my car.

Bridesmaid earrings. 3 pairs for $4. The BFF’s wedding bells ring in T-20 days!

Last, but not least, the blog’s fantastic face lift courtesy of Miss Maren {if you’re looking for reasonably-priced blog assistance, Maren’s Design Services are where it’s at!}. I know it may not look like much, but the blog has been needing these polishing touches for a while.

Summer {2012} Bucket List

…and I’ve already crossed 1 item off my list – rock climbing! Monday, my girlfriend and I conquered the indoor rock wall at the WREC. After 3 years as a gym rat at the “resort”, it was about time I braved the 3-story climbing jungle in the middle of the rec center. I made it to the top on all 3 climbs :)

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
