Hi and welcome to Nutrition Nut on the Run!

I’m so happy you’re here.

I’m Hillary Parker — the health nut behind this blog. Originally from the foggy, coastal Redwood tree haven that is Humboldt County, California, I attended college amongst the almond orchards and dry valley heat in Chico, California where I earned a bachelor’s degree in Food & Nutrition Communication. Immediately after college, I worked in employee wellness for a family-owned craft brewing company (clue: iconic Pale Ale) for over five years. At the start of 2018, I said goodbye to my full-time job as a Wellness Coordinator, packed up my belongings, and said hello to the adventure of moving across the country! I currently live in the lush and hellishly-humid Tampa Bay, Florida area with my boyfriend, Nick, and our sweet fur-child, Koba.

Nutrition Nut on the Run began in 2009 (at the young age 20) when I was a student at Chico State University. A near-death experience as a young adolescent guided me from a restrictive teen and curious culinarian to pursuing a life-long passion for holistic health and wellbeing. Given that I have always enjoyed writing, I was intrigued by the art of blogging to share my healthier lifestyle with others. Almost nine years later, I am grateful for this platform that allows me to be creative while documenting memorable meals to milestones of my twenties (i.e. graduating college and becoming a certified health coach to training for half-marathons, international travel and saying goodbye to my full-time job in corporate wellness/moving across the country).

While I am undeniably a foodie and fitness enthusiast, I believe that wellbeing is so much more than the food we eat and how much we exercise. Here you will find posts about my personal health journey, exercise endeavors & workouts, eating intuitively as I continually experiment with food that makes me feel my best, travel adventures, dialogue about self-compassion & self-love, plus everyday tips to enjoy the perfectly imperfect moments and beautiful mess of this thing we call life! My hope is that by reading Nutrition Nut on the Run, you will be encouraged to explore your healthiest, happiest life.

 Want to know one of my favorite things? Getting up early before everyone else in the house and having a couple quiet hours to myself to be peaceful and productive. — Today that looked like: pouring a big cup of collagen coffee, lighting a candle, rolling on my “focused energy” essential oils, and writing my weekly email newsletter before taking a pause to break-the-fast. — pictured: sourdough toast, sunflower seed butter, reduced sugar apricot preserves, hemp seeds + fresh organic blueberries // all from @traderjoes — How are you starting the week? #nutritionnuteats  Last night I did a thing... I enrolled in @camp.wellness: a 6-week online course (designed by the inspiring @thehealthymaven team) “helping women in wellness get aligned with their mission and pursue the life of their dreams.” ✨ Later this year, my blog (Nutrition Nut on the Run) turns TEN years old, but my commitment to health and wellbeing precedes the past decade — it’s what I am all about at my core, it’s intertwined in everything I am. It may have taken a cross-country move, ample time to think during my dangerous daily commutes, and hours spent in a cubicle to realize that life is too short to give your passions a mere 50%. If you can’t tell, I’m feeling fired up! 2019 is the year I say YES to cultivating a life deeply rooted in passion and aligned with who I am... everything else can go. #nutritionnutontherun #campwellnessbootcamp
