My apologies for the absence of posts the latter half of the week. I bombed y’all with Kauai photos… and then, bam, nothing.
One of those being to share more food and nutrition here on the blog; so, without further adieu…
Every day this week, I’ve made the same bowl of oatmeal for breakfast. I’ll most likely switch things up over the weekend, but 3-Minute (Microwave) Banana Peanut Butter Oatmeal was where it was at Monday through Friday.
This recipe is to-go friendly, as well. Simply add all ingredients (minus the water) to a glass container and take it with you wherever you may be headed that has a microwave.
Between the fiberful oats, protein-rich PB, and healthy fat from the chia seeds, this recipe does a fine job keeping me satiated for a solid three hours or so.
This recipe is gluten-free, vegan, and naturally sweetened by the banana and raisins.
3-Minute Banana Peanut Butter Oatmeal
Makes 1 serving.
- 1/4+ c. rolled oats
- 1/2 medium-large ripe banana, sliced
- 1/2 – 2/3 c. water
- 1 T golden raisins
- 1 tsp. chia seeds
- scoop of natural peanut butter
In a microwave-safe bowl (I use a glass 1 pint liquid measuring cup), combine oats, sliced banana, and water.
Microwave for 1.5-2 minutes.
Add raisins, chia seeds, and cinnamon (to taste) – stir thoroughly.
Pour into a serving bowl and enjoy with a scoop of natural peanut butter.
